VW Mommas & Poppas -- tips for sneaking good stuff into little ones' diet

My kids eat vegetables & healthy foods with not too much of a problem, and I don't usually rely on 'hiding' the vegetables, etc, in their foods, but sometimes I like to do this, like for instance when I make a big batch of cocoa-green smoothies, I'll pour the remainder that we don't drink into popsicle molds and they totally think they're these yummy fudgsicles. Has any one perchance used that book 'Deceptively Delicious'? I heard it relied mostly on sneaking in purees, like butternut squash into similar-colored macncheese, etc... Anyway, I thought it would be cool to have a thread for the *parents* on vw to exchange ideas for sneaking in the good stuff in everyday dishes, etc.
Cheers!

Great idea!

Despite the fact that I cook healthy vegan food for a living, it is still challenging to cook for a picky eater--age 5! I also used some ideas from the Deceptively Delicious book. I messed with the tofu nuggets recipe and it was a great way to get spinach into my daughters body.

Things I have had a lot of success with (vegetable-wise) are: kale chips, fresh spring rolls, salads (when using a really yummy dressing), etc. I use a lot of the recipes from my cookbook that are meant for kids and also am always experimenting. My daughter likes a lot of healthy foods, but it is still a daily effort to broaden her horizons!!

I am always open to new ideas! ;)b

I'm not a parent but I like to sneak in the veggies. I made myself a chocolate beet bundt cake for my birthday last year. It was great! I've seen a lot of recipes with black beans in brownies lately, like on the blog Have Cake Will Travel. I think you can easily put pureed spinach in brownies too but I've yet to try it.

I recently posted my recipe for chocolate vegetable cupcakes here too. You can find it here: http://vegweb.com/index.php?topic=25544.0. They contain carrot and zucchini. They're delicious.

Which black bean brownie recipe did you use? They seem to get mixed reviews.

Actually, I just made up my own. If it was PERFECT, I'd add it to my 2nd edition, but I'm still working on it, so it probably won't make the cut. However, if I do get it perfected at some point, I'll post it on vegweb or my blog.

I like to add nutritional yeast and silken tofu to lots of things, especially sauces, for extra protein, vitamins, texture and yummyness. I also like to sprinkle wheat germ on things or use in baking, in addition to nut meals
