Vegan Marshmallow Kit

I have no idea if it works and it probably costs a king's ransom, but I just saw this and I thought you'd be interested:

I have a recipe for Marshmallows.  I made them once and they were pretty good.

Marshmallows
3 tablespoon plain Emes Kosher-jel
½ cup cold water
2 cups sugar
¾ cup corn syrup
½ cup water
¼ teaspoon salt
2 teaspoons vanilla
powdered sugar

Mix together the Emes Kosher-jel and ½ cup water.  Let stand ½ hour.

After about ½ hour, start to prepare syrup. Place in heavy pan over low heat and stir until dissolved the sugar, corn syrup, ½ cup water and salt.  When the mixture starts to boil, cover and cook for about 3 minutes. Uncover, and continue to cook without stirring, over high heat, until a candy thermometer reaches 240-244 F.  Remove from heat and pour slowly over the gelled mixture, beating constantly. After all the syrup is added, continue to beat for about 15 minutes. When the mixture is thick but still warm add the vanilla.

Put the mixture into an 8"x12" pan that has been lightly dusted with cornstarch. When it has dried for 12 hours, remove it from the pan, and cut it into squares with cornstarch. Dust each piece generously with powdered sugar. Store the well-powdered pieces in a closed tin.

Unless something has changed recently, Emes was exposed a while back as actually having animal products in it.

Yes, you're correct about Emes jel. I forgot when I posted this recipe.  My humble apologies. I guess you could try substituting agar agar powder for the jel.  I made this recipe several years ago before the Emes jel scandal and only made it once.  I don't like marshmallows enough to want to make it again.

I have some vegan gel-stuff I picked up at my HFS.  I'll check the brand when I get home.  It's not Emes, but it may work the same.

I'm pretty sure that the vegan marshmellow is the holy grail of the vegan community! The closest thing I have found is the smuckers marsmellow ice cream topping--it tastes just like marshmellow, but with out the gelatin (it's also on PETA's can't believe it's vegan list). you can defintely make rice crispies treats with it, but it won't set like the real thing--you have to be happy plopping your mix in a bowl and eating it with a spoon--but it really does taste great!

I went on a search and found out that agar will not set up in marshmallows because it will not reset once the gel point is reached.  So sad :'(

I do have a rice krispie treat recipe that does not use marshmallows. I don't know if Kellogg's Rice Krispies are vegan but I'm sure there may be a vegan brand available.

Rice Krispie Butterscotch Squares

5 cups Rice Krispies
¾ cup brown sugar
¼ cup margarine
¼ cup corn syrup
Pinch salt

Microwave or cook brown sugar, margarine, and corn syrup together until just dissolved.  Add salt and Rice Krispies.  Mix until well coated with syrup mixture.  Press into square pan.  Cool and cut into squares.
A teaspoon of vanilla or maple flavoring may be added.

I am currently on the hunt for vegan meringue  and marshmallows. Why or why must these things be so unattainable.I am determined to perfect both of them once I have my own kitchen. I was under the impression that you could by vegan gelatin mixes and I wonder if one of these would work. I shall have to look into it.

kosher gelatin is supposed to be vegan i think... or it might just not be from pigs. i don't have a mixer either.

Pangea makes a great vegan marshmellow--I was at a vegan restaurant and they used them in a rocky road cookie--it was so good I thought I had died and gone to vegan heaven!

Yum! I'm definitely going to have to order this kit! I did the currency conversion and it looks like it comes out to just overe $6.50...not bad! Thanks for sharing the link! :)
