I am wondering if you can freeze almond or soy milk. I can only find 1/2 gallons and never use it before the 7-10 day expiration. Thank you!

I don't know about almond, but soymilk will separate if frozen (have tried it). You can whisk it once thawed, but it will remain curdled and stuff. =/ It's fine for baking, but not great for drinking.

coconut milk freezes great, though.

I always thought they had a much longer expiration than that.

They do, but once you open it it's supposed to be used within 7-10 days.

I've used soymilk after then, though, and have yet to poison myself...

Yeah, sometimes soymilk will be open for a month in my fridge. I still use it and haven't died yet.
