funfetti

Over Christmas, my husband's cousins were talking about how much they loved Funfetti cake.  I'd never had it, but I decided to try to make one from scratch.  I figured all you do is add sprinkles to the batter.  I made one for New Year's.  It was good, but the inside wasn't very pretty (see pic).  Has anyone made a funfetti cake that turned out well?  What kind of sprinkles and how much did you use?

I've never made a Funfetti Cake from scratch, but I'm guessing your problem was with the sprinkles bleeding? I've made the Pilsberry kind. They have very few sprinkles, probably because of the bleeding. Their sprinkles are also tiny. That's all I have to say, sorry.

That's probably key, Courth--fewer sprinkles so you can see the individual bits better.

FTR in Britain they're called "hundreds and thousands." Or at least they were up to about the 60's.

I used the white cake recipe from Eat Drink & Be Vegan, but only because I just got that cookbook and was excited to try new recipes.  Usually, for white cake, I use the recipe from Vegan Lunch Box:  http://shmooedfood.blogspot.com/2006/01/fluffy-white-cupcakes.html.  I filled this one with this lemon coconut custard filling:  http://www.pakupaku.info/sweets/lemoncoconutcustard.shtml and used the vegan buttercream frosting from VCTOTW.  It tasted pretty good for white cake (which is not at all my favorite) but I'd like to make it prettier before I make it for Funfetti fans.

Yours looks OK, Lauuren...maybe just use fewer sprinkles?  So there are more isolated dots?

And definitely coat them in flour.  This is a good rule of thumb for anything that might sink in batter--chocolate chips, nuts, blueberries....

Sounds like I'm using the right shape of sprinkles, so I'll try using less of them and adding them to the dry mix.

Oh I forgot about funfetti cake. That is awesome! I think you did a pretty good job, but yeah... what everyone else said. Maybe just less sprinkles next time? I'd still eat it though!

Ooh! That funfetti cake does look good! (drool) Good luck with it even though I would just eat it as it is. It looks great to me! Yummy!

I loved Funfetti cake so much in college. Once actually had a kitchen we made it once a month. I found that the long thin sprinkles work the best.

Also thanks for the white cake recipes.
