Bob's Red Mill Gluten Free Flour

Is it just me or my baking, or does the Bob's Red Mill Gluten Free Flour kind of have a funky taste?

I baked muffins with it a couple of weeks ago and tossed them because they tasted weird. I thought I had done something wrong.

Then I tried another recipe today and still ended up with that strange, strong taste. Did I get a bad batch of flour or does this flour just have a different taste that takes getting used to?

I don't have any on hand so I can't check, but a lot of their mixes have bean flours or sourghum flour in them, both of which are an acquired taste.  They both have a somewhat strong flavor that comes through in the baked product.  Its not bad, but like whole wheat flour for those that can eat it, it takes getting used to.

I checked their web site and the mix does have both flours in it, including fava.  Have you used this mix before, because if it tastes different than usual, it may have gone rancid, which any flour can do over time.  If this is your first time with this mix, I bet its just the taste of the bean flours. 

I make my own flour mixes, which is very inexpensive, and lets me tailor the mix to my own tastes.  I like the ones on the Living without web site,http://www.livingwithout.com/, click on recipes, and then click on Substitution Solutions on the right side of the page.

Also, any of Bette Hagman's books have several GF flour mixes you can try out.  Once you get the mix mixed up, if you don't use it very often, I would store it in the fridge or freezer in an air tight container to prevent it from going bad.  I live in WI, so only put my flours in the fridge in the summer, when I have the most problems.

i used their chocolate chip cookie mix once, and man were they funky!! i really wanted to like them because they were so easy to make and had yummy chocolate chips in them, but the fava beans just killed it for me!! its so much easier to just substitute blends of flours for non-gluten free recipes...and if you want a really good brownie recipe that is gluten free, try black bean brownies!!

This explains a lot. It's my first time baking with Bob's Red Mill Gluten Free flour. I opened a new bag I bought at Whole Foods.

The flour was too strong and strange a taste to actually enjoy the banana bread I baked using the babycakes cookbook recipe. Which is too bad, because it was a simple enough recipe. I just couldn't get past that funky taste.
