Vegan Recipes for anti-candida diet . . . HELP!!

Hi guys, haven't been on the forums in a while, been really busy and now that I am unemployed I have a lot of time to myself to cook things.  Yay!  I'm writing cause I need help really bad!

Recently my mom is studying to become a holistic nutritionist and has used me as a case study for her assignments.  Based on my diet she recommends that in the New Year I do a 4 week anti-candida diet to normalize the functioning bacteria in my colon. 

So as an overview of what I am NOT allowed ot eat during this diet:

1.  Yeast (active yeast of any kind, though I can have some nutritional yeast)
2.  Bread, refined flours or cereals
3.  Sugar of any kind (this includes sugars low on the glycemic index such as agave syrup, brown rice syrup, or sugars like molasses, sucanat, maple syrup, etc.)  I CAN have stevia in small amounts.
4.  anything fermented such as miso, soy sauce, tamari, tempeh, worcestershire sauce, Bragg liquid amino, etc.
5.  Vinegar of any kind (white, red wine vinegar, balsamic, etc)
6.  Fungus or mould (mushrooms of all kinds, I can eat in small quantities only IF they are cooked)
7.  Fruit juice, even 100% all natural.
8.  Dried fruit.
9.  Have to limit my salt.

Basically I am allowed to make a salad dressing out of oil and lemon juice, and eat salad.  I am allowed to eat beans and grains.  I am allowed 2 servings of fruit per day, but it can't be dried fruit.  I am allowed to eat nuts, seeds, etc. 

While I am doing this diet, I have to take probiotics, drink lots of water, and take magnesium powder in tea, as well as take liquid mineral supplements to help me with my salt cravings. 

If anyone has any recipe ideas, or ideas of things I could cook/bake any ideas that fit the above category are extremely welcome.  Thanks!!

i need to go on a candida diet too, and i found this awesome book which is allll about candida!  it has recipes with three stages and all of the info you would need.  its called rainbow green live food cuisine by gabriel cousens.  its all raw, but youll probably just be eating a lot of veggies anyways.  so why not just eat them raw!!  the only thing different is that on this you can not eat grains or beans because they contain mould and are not raw.  and no fruit in the first stage because it turns into sugar, the candida thrive on sugar.

one thing that someone did on a thread that i started about the candida diet, was say "I could eat this this and this", i thought that was awesome and got right to making a list of everything that I could eat!!! it made shopping really easy then when i went to make something for dinner i could just look and see.... ok i have these ingredients, what can i make.  that certainly made my life easier.

For some reason I thought my mom said beans and grains were ok as long as they were well cooked . . . I dunno if that means the mould is killed off and it doesn't matter, or whatnot . . . I dunno.  I will have to ask her again.  SHe gave me a list of low-fructose fruits I can eat two small pieces per day . . . and spread them out type of thing.  I basically have about 2 weeks to do as much research as I can before starting this.  I hope that I can gather as much info on what I CAN eat, like you said, before I start, on January First. 

Something tells me if I have a whole bunch of raw vegetables all day long I'll lose some weight . . . I think that might be the greatest reward coming out of this.  :)  Need to lose about 40 lbs.

I just spoke with a friend last night who was describing how she has this and this is her diet now. Forever. It was funny because the only alcohol she can drink is potato vodka for some reason, so if the bar doesn't have it, she brings her own. I thought it a bit odd.

Since your mom is a nutritionist, couldn't she suggest some foods that you CAN eat? I don't know, I've never been to one. :)

my naturopath said that oats and brown rice were ok, and potatoes, a lot of things that this book say are no good.  i guess it depends on how serious of an overgrowth you have.  I kind of wanted to try out raw foods.. so I will be going that route.... when I get around to it.  ha.  I havent had a flare up lately... so my reasoning for going on it is super weak "I should go on this diet because I still have an overgrowth in me... even though I don't notice any symptoms anymore other than white stuff on my tounge"  eh.

As long as you feel ok, is there a need to get very strict? I don't know much about it, which is why I ask. Can a symptom such as the white stuff on your tongue turn into a flare up? For my friend, things got really quite serious, and it was all tied into this; it was poisoning her blood to an extent, if I understood what she was saying (?). I'm just glad they figured out what was going on and she is better now (it took YEARS).

I really dont know!  I did this diet for 2 months because my yeast infection got so awful, the naturopath recomended doing it for 3 months, but I was on tour for the 3rd month and couldnt complete it.  Since then I've felt like I got the overgrowth somewhat in control but not totally gone because I didnt finish the diet.  I just want to do it again to make sure that it's gone so that it doesnt flare up again in the future.  But will it flare up again?  I dont know.  Is it doing some other problems that I can't notice?  I dont know.  ehhh.

Personally, I would have my mom do all the cooking since she'd know the best what is and is not allowed.  Especially if I agreed to be a lab rat for her studies.  :)

I think I might start a cleansing diet like this in January. Tess has some good info in her book and I have done anti-candida diets before....long long ago before I was vegan....

It will probably be easiest for me to stick to this if I make a detailed meal plan. I think I will try going thru the recipes that I currently use often and seeing which ones can be used or easily modified. If I come up with a decent list, I will post it.  I'm thinking of focusing on yummy ethnic foods. Indian dishes, rice, beans, etc...I don't feel that I could handle going raw in winter. It is like 7 degrees here and I need some warm food!

For me the hardest part will be giving up pasta...we are regular pasta and bread eaters.

Also, for the dressing, I think the Goddess Dressing on here might meet the requirements if you eliminate the vinegar. It is freaking amazing....its basically tahini, garlic, olive oil, lemon juice and chives.

kelp noodles are a good alternative to pasta and i am pretty sure they would work for an anti candida diet

Sweet, kelsi! I might look into the kelp noodle idea...I could totally eat those with some garlic and a little  oil...Oh man, its diva time and everything sounds good right now. I'm starving this month.

Hey guys!  I stumbled upon this forum looking for candida safe recipes and I just felt like I wanted to add in.  First of all thanks for the kelp noodle idea!!!  I havn't tried them yet, but I feel like they could be a great tool in this diet.  I've been weaning into it for the past month and my official start date is January 1st.  I'm planning on going big, three months very strict then two more in a recovery phase. 

Wicked literature:
I'm currently studying to be a naturopathic nutritionist which is how I discovered and embarked upon my candida quest.  Along with the info I've learnt in school, I've found that the one thing I really cannot do without is a book I picked up called the "Complete Candida Yeast Guidebook"  by Jeanne Marie Martin and Zoltan P. Rona.  This book is FANTASTIC!  It's got everything from an in depth section on Candida in relation to diseases, it's got three phases of diet plans along with lists of foods to eat and to avoid on each phase.  It's got recommendations on how to clean and cook foods properly for the diet and the best part is it's got a ton of recipes (not all vegan granted but they can be modified easily).  It's really the most comprehensive book I've seen so far.

(bear in mind that if you check this book out, she gets really finicky on certain things, especially mold control, and it is a good idea to cross reference the info with a nutritionist at a health food store, or something like that, but it is still in my mind the most accurate book I've crossed paths with)

Raw Food:
The raw food diet is defnitely an interesting approach, but I would be careful with it, as some people have a really hard time digesting raw foods, and people with candida already tend to have impaired digestion so it might not be the best way to absorb all your nutrients.  Everyone is different so see how you feel on it, I know some raw foodies who swear by it, but I love my cooked food and that's just me!

Antifungals:
I wonder also if you guys have looked into what you're going to use to kill the candida?  I didn't realize that it was such a big deal but the nutritionist I talked to told me that it was pretty important to deliver a good blow to the yeasties and other beasties at the start and then support the rebalancing of flora through proper diet and probiotic use.  There are some wicked candida cleasers available at health food stores, as well as other alternatives like taking four drops of oil of oregano 3-4 times a day for three weeks, but I don't know if you've ever tried oil of oregano, but I'm one day on that and I'm definitely heading back to the health food store to pick up the cleanser kit.  That being said, if you havn't looked into natural antifungal treatments, it's well worth it because it's a pretty crucial phase in killing these little buggers. 

I hope that my blabbing will be of use to somebody here!  With all the research I've been doing this past month in preperation it's nice to be able to spread some of it around.

thanks ivy!! i just ordered that book, it sounds perfect.  I already have the cousens book,  maybe i'll put the plans together, it seems like this one is not all raw, so that might be nice for the transition.  this one also seems easier to understand, the rainbow diet is very science heavy and hard to read.

I just came back from the doctor who told me I had to go on a candida diet.  My sugar days are numbered.  Does anyone know if wheat gluten is OK on an anti-candida diet?  Still trying to figure out how to flavor my tofu without anything containing soy or sugar.  Any ideas on either front?

I think I found your problem.

I think most soy sauce has gluten, which is probably what she was referring to.  They DO make gluten free soy sauces though, you just have to read the labels.

PS- Narcissus, I thought the way you said that was really funny.  ;D

I heard that you can still eat tofu on the candida diet?....
Raw garlic is also supposed to be super helpful.

I'm vegan and have attempted an anti-candida diet before but found it very difficult..My symptoms have been getting worse so I'm attempting it again and intend to be really strict this time..I don't really want to lose any weight as I'm already pretty slim..I know it's going to be tough!
Think I'll be taking some good quality vitamins to make sure I don't get malnourished!
