I know Earth Balance is created through this process, but I always assumed that it was pretty safe/healthy. This article makes me question that, though. In the newest issue of Gourmet magazine, there also is an article that mentions interesterification, and how it's basically pretty bad for you as well (the theme of the article was 'getting back to natural foods' or something). This makes me so sad!! i love earth balance... :'(

oh, that is really interesting. it seems anymore that if it isn't whole veggy  foody, there is something in it that will mess you up!

According to the Earth Balance website, they do not use interesterification in the production of their spreads - it's apparently the Palm Oil that gives the solidness to the product.

I was going to say, while I think Smart Balance and Earth Balance are made by the same people, Earth Balance is different from Smart Balance and the article didn't say that EB was made with this process. I had some Smart Balance on bread a while ago and actually thought the texture was disgusting, though I can't put my finger on why, exactly. I'm pretty sure EB is ok. Nevertheless I think using plain oils as added fat is better still.
