Seriously, what the heck does whey DO?!

So, I'm helping a friend of mine paint her new condo next week, and she was going to make some lemon bars from a Krusteaz mix, which was really nice of her (especially since she hates cooking in any form). However, they have whey in them. There is whey in EVERYTHING!!! :P :P :P

Does anyone know what whey even does? All I can find is that it is a by-product of cheese production.

Is it just in things because Americans eat so much cheese and they don't know what to do with the whey? Is it for added protein (though I don't think this is the case because it's usually one of the last ingredients)? I felt really bad telling her I couldn't eat those (though I'm going to bring the lemon bars from this site because those look amazing and will be better than those from a mix anyway). And I've just given up buying store-bought bread because it either has HFCS, whey, or honey--all ingredients which are completely unnecessary to make bread!

Stupid, stupid whey...

I'm not currently eating vegan, but when I first went veg, I was hardcore.  The thing that really shocked me was how many seemingly vegetarian food items (like bread!) contained animal bits and products.  It's kinda disturbing.  What's with all the dead animals anyway?

Actually yes and yes.
It is a factory cheese-making byproduct that used to be disposed of!
It has concentrated protein, it does add quite a bit of protein (though in processed food this is rarely the intention) it's more for curst and crumb factor like the link says.
The protein factor is a big deal when thinking of the fact that some people use it to gain weight (ie weight lifters).
If only they knew.
Animal Protein= death! ...across the board... death for an animal, death for you.

Whey, like sugar, potato starch and HFCS, is also a cheap filler ingredient. It "bulks up" the recipe without costing a lot. And Americans are so obssessed with protien, as all veg*ns know!!
This struck me when I first read the "more with less" cookbook...she put milk powder, wheat germ, soy powder etc in EVERYTHING--gotta get that protien!!  ::)But we need so much less than we think, especially those with more sedentary occupations! (I know, I know, preaching to the choir here... ;))
