Type 1 Diabetic Vegan Teen
I am by no means new here any longer, but I've never really posted on the forums much. (Perhaps that shall soon change). Anyhow, as of January 2011, I am a certified type 1, insulin-dependent diabetic! (Woo!) Therefore, I am trying to take my previously pretty healthy vegan diet and make it a bit better and cut out high G.I. carbs, more or less. (I also can't eat too many carbs at once any longer- at least not until I am on both short-lasting and long-lasting insulin).
Speaking of veganism, I have been one for a year straight now and was one for about 10 months before that (fell off the bandwagon, I did, sadly). I've been my family's sole vegetarian with no "interruptions" since I was 12.
Hi! Glad to see you posting! ;)b Sounds like you're well on your way to getting a handle on positive ways to manage your DM1... good work! VW is awesome for finding any kind of recipe you might ever wanna try, and others who have worked within a similar paradigm. As I'm sure you know, what you eat has such a huge impact on how well you thrive, even more so when DM is playing a role: glad you're on a good path to eating well!

Hi there! My older sister is a type-1 diabetic, and even though she is not a vegan, I do enjoy cooking her some of my veg-specialties. What are some of the lower-GI meals you enjoy? For my sister, I like to make her healthy, whole-wheat baked goods without sugar, and I usually sweeten them with apple sauce (so obviously they aren't TOO sweet, but whatever!), and sometimes I add some other source of fiber, such as wheat bran or germ (the wheat germ contains tons of healthy fats also). Anyways, welcome!
How's this working out, a year later? I keep trying to plan meals for my diabetic un-vegan friend, and come up with blanks. I'm curious to learn what you've been eating.
