Newly Vegan, with a slight hiccup
I've been vegan for a week now, and I have to say that I feel so much better than I have in a very long time. And vegan food = YUM! XD
I'm allergic to soy, which is turning out to be less of a problem than I thought, but I do have a slight issue coming up.
I'm going to visit my brother and his wife next week in Wisconsin. They are very supportive, and I love them to death. They've been looking forward to my cooking and I don't want to disappoint them. I'd love to cook them some vegan meals, but here's where the problem lies; he has celiac's , so that means no gluten for him, and she has a severe nut allergy.
So: What are some of your favorite recipes that are Soy-free, Gluten-free, and Nut-free and also Vegan? It seems like an impossible task, but if I can get through next week catering to everyone's allergies, I'm certain that can get through anything!
I'm planning so far on making vegetable and bean tamales, black bean burgers, and some squash shui mai, but that only covers 3 meals, and I'd like to cook them a full 7. (I'll be there for a week).

I don't know how adventurous an eater everyone is, but here are some good recipes.. and just the beginning!
Black bean, cilantro and apricot salad
Orange, spinach and yam soup
Spanish lentil, mushroom and tomato salad
Thyme lentils over polenta
Vanilla Sweet potato and kale curry
Moroccan tagine of lima beans, cherry tomatoes and black olives
Ultimate Winter couscous
Italian Stew with Winter Squash and Chickpeas
Kale salads such as this one:
Red lentil, spinach and lemon soup
(use another nondairy milk)
Yummy lentils & spinach
Simple mushroom curry
Chickpea, tomato, & corn curry
Yummy French Onion Soup
(sub oil for margarine, if you can't find a non-soy-containing one)
Vegan taco soup
(omit vegan ground beef crumbles, if soy-free/ gluten-free ones unavailable)
