Newly Vegan, with a slight hiccup

I've been vegan for a week now, and I have to say that I feel so much better than I have in a very long time. And vegan food = YUM! XD
I'm allergic to soy, which is turning out to be less of a problem than I thought, but I do have a slight issue coming up.
I'm going to visit my brother and his wife next week in Wisconsin. They are very supportive, and I love them to death. They've been looking forward to my cooking and I don't want to disappoint them. I'd love to cook them some vegan meals, but here's where the problem lies; he has  celiac's , so that means no gluten for him, and she has a severe nut allergy.
So: What are some of your favorite recipes that are Soy-free, Gluten-free, and Nut-free and also Vegan? It seems like an impossible task, but if I can get through next week catering to everyone's allergies, I'm certain that can get through anything!
I'm planning so far on making vegetable and bean tamales, black bean burgers, and some squash shui mai, but that only covers 3 meals, and I'd like to cook them a full 7. (I'll be there for a week).

Thanks blinknoodle! Those are wonderful, I'll definitely be making the Red Lentil Soup, I think it's right up their alley. The others look very delicious, and I'll be cooking them up very soon.  ;)b
I'll see how many of the others I can make for them, but I haven't gotten the opportunity to raid their spice cabinet  >:D and see what's available at their grocery store.
I definitely feel much less overwhelmed! I can do this!

It went super well!
Wisconsin is not really vegan friendly, but my family definitely ate much better while I was there. They have a much better understanding of why I went vegan, and they are supportive of it.  ;)b

The produce there was awful, which I didn't plan for. That kind of cramped my style. :/ And I had so much trouble trying to find ingredients for the others that I realized I had to mostly improvise.  I wound up making the tamales from Veganomicon (had to go to 3 separate stores to get all the ingredients), which everyone adored.
I found out after I got there that my sister-in-law doesn't like soup. Also slightly problematic. Made them the chickpea, tomato, and corn curry, only not exactly, because I couldn't afford maple syrup, put some sugar in instead. It was super yummy :). We ate it with brown rice. I did make them sauteed veggies ( garlic, mushrooms, and onions were not bad) with hushpuppies, made from the leftover cornmeal from the tamales. That they also liked. I subsisted mostly on rice and beans, and a little seitan that I bought just for me.
Sometimes I get a bit too ambitious. :/ I fully intend to make more of these when they come down to visit me here in So. Cal. where the produce is fresh and cheap.
