New vegan

Just wanted to share my excitement at finally making the switch to vegan. My husband and I have been lacto-ovo vegetarians for about 20 years, but about three weeks ago I had this epiphany moment where I just thought "What are you dragging your feet about...just do it." DH got on board at my suggestion and I thought "yep, it's time." With the recipes on this site, it's been a lot easier than I anticipated. Our two grown kids and our DD's BF are vegetarian, but I have a feeling that their switch to vegan will come sooner rather than later, especially after they tasted the awesome "sour cream chicken" enchiladas I made for dinner last night.

It was an exciting day for me, when I made that one up. It was the first dish I made that was vegan that could of fooled someone! It made me realize that everything was going to be okay, that I would not be living on stirfries and hummus. Haha.
Good luck! I make my parents vegan food 3 times a week, and it always has to be something that doesn't taste vegan, if that makes sense. I have since found out that it is possible to make many things that way.
My kids have already put in a request for me to fix the enchiladas when they come over to dinner on Sunday. I really like this website, because I know a lot of vegetarians but no vegans.

My heart skipped a beat just now when I read that. Would you be interested in adopting another child...girl, very cute...dimples and everything...a little on the older side, but doesnt take up much space... ;)
