Hello! I have recently been playing around with GF pasta doughs myself. I prefer to make stuff from scratch but I have seen and tasted some excellent quinoa or corn pastas. There are also artichoke and spinach ones! I just experiemented with making my own from the vast amount of GF flours I have been stocking up on. I think I used quinoa, brown rice, and garbanzo bean flours. I'm not picky and it came out alright. It's very veryyyyyyy dif. than using normal wheat flour so keep it semi moist. hope this helps!
