hi veggies

been cooking a lot the last week or so.
felt great after eating some quinoa with escarole and mushrooms.
even tried making wheat gluten cutlets.
i kinda failed
first off i think you should mix the spices into the mixture, not try to make them absorb after.
second i couldnt get the texture right
i set aside one set and battered and deep fried them, kinda bleh
the other set i marinaded in soy sauce, cilantro, garlic powder and cayenne pepper, and grilled them
those werent bad, if a little chewy.
any tips would be appreciated

Seitan can be a pain. Do you have either "Vegan with a Vengeance" or "Veganomicon?" Both have good seitan recipes that detail each step of the way. I've had great success with those. The spices should DEFINITELY be mixed in with the vital wheat gluten, and if your recipe said otherwise, it sucks. Keep trying--I've made seitan from many different recipes using different methods, and I'm still finding the best methods.

Also, you could try chickpea cutlets (from Veganomicon) or BBQ Seitan ribz ( http://blog.fatfreevegan.com/2007/05/barbecued-seitan-ribz.html )
for a short-cut gluten cutlet recipe. Both are delicious, and both make getting to know vital wheat gluten a little bit easier. I make these when I want a meaty seitan cutlet, but I'm not feeling up to the challenge.

seitan is kinda tricky... maybe if possible, start with tofu! it's sooooo easy and versatile! i like it best pressed, cubed, fried in some oil till lightly browned, and coated with whatever sauce i have around (barbecue, teriyaki, sweet and sour, etc.)

i'm celiac, so i can't eat it as it is made from gluten and it stinks, because i used to love it before i was diagnosed.

I make seitan all the time and it always turns out well. . . no recipe.

I do it differently each time here are some tricks:

1. Use vegetable broth in place of any water.
2. Add soy protein to make it less chewy. I will use 2 cups  gluten to 1 cup soy protein powder OR chickpea flour. The latter is tastier.
3. Molasses! Molasses adds complex flavors to it and sweetens it up. You only need about a TBSP per cup of gluten.
4. Add liquid smoke flavoring, red cooking wine, tamari/Braggs/soy sauce, marsala. Adjust until you get the taste you like and mix in with veg broth and molasses.
5. Finley minced artichoke hearts. Yes, that's right. This adds great texture.
6. Knead, knead, knead!
7. Boil the seitan for 1 hour and then drain well (it absorbs  a LOT of water).

Put it in the fridge or freezer and and use as you would meat. You'll still want to fry, bake, saute or whatever.
