Going to Mexico

- any suggestions of veggie dishes I can look out for whilst on my hols there?  The resort will be touristey and fairly accomodating for sure, but just wondered if there's any specifically mexican v dishes out there?

What part of Mexico are you going to? I went last year and my options were more limited than I thought because of the cheese, lard or chicken broth in the food. Don't assume all beans and rice are vegan. Street vendor foods such as grilled corn, fresh fruit, tortillas, guacamole were vegan. A couple Italian places I went to used vegan pasta or vegan pizza crust.

Am really lookin forward to it!

We're going down the coast from Cancun - touristy no doubt but I'm sure there'll be fresh salads and the like.  Based on past hols in Spain and its various islands, I'd second guessed even the beans may not be veggie! fajitas I'm down with; never had enchiladas and tostadas, so will try those (if cooked veggie-style!)

I second everything Saskia said.  The only advice I can offer is, if you are going to be spending time away from the resort, take an insulated bag.  It's good to have a cool, bug-free place to store the fruits and things you buy from vendors.  A little time in a hot car can destroy all your food.  Being vegan here can be challenging, but there are usually interesting fruits in season. 
I hope you have a great time!  I'm reasonably certain that you won't need to bring Uggs.

Well I've been and have to commend that particular stretch of soft white sand and palms (Riviera Maya) as a paradise.  O M G how I wished I was back there, lazing in the sun, yoga on the beach, food in my belly, drink in hand!  Beautiful, beautiful ... foodwise the hotel had 8 a la carte restaurants and one handy vegetarian menu - gracias senors - the most accommodating was the Thai/Chinese/Japanese restaurant who would willing cook sans flesh and make me veggie sushi - thank you, thank you, thank you.  Aside from that, your usual stuff for buffet brekkie; fab guac, salsa n nachos for lunchies - nom nom; xcellent juice bar by the Spa (it was kindly explained to me that they didn't serve alcohol there after I'd ordered vodka n orange - doh!)  Loved it ... oh and the mossies dined well during my stay  :'(
