All-American roadtrip: any advice?

I *think* this is the right place to post this...
A good friend of mine is about to move from Vail, Colorado, to Portland, Oregon for a few months
She's a vegetarian, and is, at this stage, planning on doing the trip in three days, spending a night in Salt Lake City and a night *somewhere* in Idaho.
Any recommendations of a good place to stop in Idaho?
Any recommendations on vege-friendly places to go in Salt Lake City?
General advice?
I know that when she gets to Portland it'll all be sweet because I keep hearing how much of a vege-hub it is.
