Your favorite seitan recipe?

I have tried the VWAV, the Vcon, and JoAnn Stepianiakk's seitan recipes.  I can't seem to get it NOT spongy or raw-like.  What is your favorite recipe?  Am I doing something wrong?  Someone suggested using a crock pot, should I try that?

I've had a lot of hits and misses with seitan..some have come out like bread, others to thick and doughy.

My favorite seitan is from "La Dolce Vegan" by Sarah Kramer.  Her technique it to make basic seitan using equal parts water and VWG and knead for five minutes.  I actually do set my timer for five minutes and walk around or watch TV and knead it for five full minutes.  Then she simmers for in different flavored broths (depending on what flavor you want, such as faux chicken, beef, etc.) for 50-60 minutes.  She offers the suggestion to bake at 350 in a lightly oiled pan for another 30 minutes for a chewier texture but I've never done that.  I've had some hits and misses with this method, but mostly I like it and they slice up rather well to make stir fries and what not.
