world vegetarian day

i was thinking of making food to share at work on october 1st.  any suggestions of tried and true recipes for people who have never even MET another vegetarian before?  let alone a vegan : )

I'm thinking of doing a couple sides, a couple desserts and some snacks.  so that people could come in and sample things to go along with their lunch.  A LOT of people at my work are dieting too, so i was hoping to put up nutrition information and weight watchers points or something.  i dont know.  maybe that goes too far.  but anyways.  YEAH.  give me your suggestions!

I think that is an awesome idea and I bet the people dieting would really appreciate getting some healthy food ideas.  For desserts I would suggest peanut butter cups!! Everyone would love you because they are so delish.  Although you might not want to post the nutrition info for those, haha.

Try a creamy onion/garlic dip with crudités. They won't even know they're eating tofu.

I'm in the opposite camp.  My brother-in-law can taste a teaspoon of tofu in a vat-sized dish.  I'd stay away from tofu or other "vegan" food like tempeh or fake meat.

How about lavash roll-up sandwiches.  Spread the lavash with hummus or guacamole (there's one brand of guac at my local store that is vegan) and veggies.  I wonder how lavah roll-ups with veganized pesto, basil, tomato, finely chopped bell pepper, onions, and black olives would taste?

And definitely cupcakes or Kick-Ass Molasses Cookies (I add a small jar of chopped ginger) or Time-Warp Lemon Squares.

i really like the spicy chickpea snack on this site, maybe pita and hummus, salsa and chips, Sweet potato anything..... lol

cuppers or cookies are always a hit for dessert or snack type stuff.

How about some spicy lentil dal with pita triangles.  :P <--lip licking smiley!

how about the asparagus-spinach dip from vcon?  it's so good and you can show people that dipping veggies into other veggies can be just as/more delicious that dipping them into fat laden animal excretions.

and then make chocolate chip cookie dough brownies - theyre amazing.  seriously. like you'd be doing your coworkers a disservice if you did not make those.

Just veganize the brownies in this recipe...that's what cl did.

Chocolate Chip Cookie Dough Brownies

Brownie Base:

2 sticks (16 tablespoons) unsalted butter
2 1/4 cups granulated sugar
1 1/4 cups Dutch process or Hershey’s “Dark” cocoa
1 teaspoon salt - if using regular salted butter, decrease to 1/2 tsp.
1 teaspoon baking powder
4 large eggs
1 tablespoons vanilla
1 1/2 cups all purpose flour
3/4 cup semi-sweet chocolate chips

Filling:
12 tablespoons unsalted butter, softened
1/2 scant teaspoon salt (omit if using salted butter)
3/4 cup brown sugar, packed
6 tablespoons granulated sugar
3 tablespoons milk
1 tablespoon vanilla
1 1/2 cups all purpose flour, lightly spooned and swept

Topping:
1 1/4 cup semi-sweet chocolate chips
1 1/2 teaspoons butter or vegetable oil
1/4 cup lightly toasted chopped walnuts*

Preheat oven to 350 degrees F. Line a 13×9 inch square pan with Release foil or parchment.

In a 2 or 3 quart saucepan, melt butter over medium heat. Stir in sugar and cook, stirring constantly, for about 1 minute or until sugar melts and mixture takes on a nice sheen. Add cocoa and stir until smooth. Remove from heat and pour mixture into a mixing bowl. Let cool for about 5 minutes, then stir in the salt and baking powder. Stir in the eggs (one by one), then add the vanilla, flour and chocolate chips. Spread batter in pan and bake for 25-30 minutes or until brownies are set. Let brownies cool on a rack for at least a half hour.

Prepare filling. Beat together butter, salt (if using), both sugars, milk and vanilla. Add flour and stir until flour is incorporated. Spread this mixture over cooled brownies and place in refrigerator for about 30 minutes to help firm up dough.

In a microwave-safe bowl or in a double boiler, melt chocolate and butter. If using a microwave, combine chocolate and butter and microwave on high for 30 seconds. Stir and repeat until melted. Spread melted chocolate mixture over cookie dough. Sprinkle walnuts over top. Allow chocolate to set, then lift from pan and cut into bars.

i actually use the jovb brownie recipe and put it in a 9x13 pan so it's not so thick, then i make that cookie dough recipe except i add cinnamon and salt and i don't bother topping it with nuts.  i like the jovb recipe for it cus its oil free and it's a a dense fudgy brownie that can support the dough & ganache.  also, she calls for a full cup of chocolate chips in the dough layer and i think 3/4 would be fine, i had lots extra that didnt fit in the dough.  she also uses a full cup of chips in the topping (and shes only using a 9x9 pan) that's waaaay too much, i used a full cup for my 9x13 pan and it was perfect.

OH MY GOODNESS!!! this went SO well.  holy shit.  i was SHOCKED.  i had several people come up and compliment me and some of them said "you know, i'm a rancher, but this is so good, will you send me the recipe??" lskadjflaksjdf.  i will definitely be doing this yearly.  a lot of my closer friend/coworkers are dieting, so i wanted to make food that they could eat on their diet.  so i didnt use your suggestions.  i'm sorry!  i was gonna make the chocolate chip cookie dough brownies, until i realized that it uses 3 cups of butter!!!  toooo much for me.  they looked amazing though.  anyways.

i made, all from fat free vegan

pumpkin spice bread (this was a HUGE hit)
pineapple coffee cake
spicy eggplant spread on mini veggie wraps
tamale bites

chocolate chip cookies (dont remember which one... but they were gone in THREE HOURS!)

by the time lunch came, there was only one or two servings of each dish left!  it was crazy.  and i made a lot.

  i was gonna make the chocolate chip cookie dough brownies, until i realized that it uses 3 cups of butter!!!  toooo much for me.  they looked amazing though. 

yikes yeah i never use all that.  like i said up there i use the oil-free jovb brownie recipe then use  the dough and ganache layer to cover double the size brownie that she suggests.  it's still definitely not healthy.. but not as bad. 

that's great that your coworkers loved your stuff!  i think people really just assume we eat boring bland stuff until they have someone put food that proves otherwise in front of them.  good job!
