What did you cook / Eat today? .....A question to drool

We can share in this place, our daily intake of what we cooked and ate.This can be Breakfast, Lunch or Dinner.
This can be a real fun thread if people post the photographs too.

Today I prepared Fawa beans-Potato spicy curry and Rotis (Indian breads are my wife's department)
Ate with leftover rice and Moong beans spicy curry and Naga chutney. :)>>>

I just made Kung Pao Tofu with peppers, broccoli, onions, and cashews.  I'm going to have it for dinner tonight...woo!

I had a nummy lunch today... Chickpea salad on a bed of lettuce and other veggies, and bread dipped in homemade flaxseed dressing.

And I had oatmeal for dinner. Yeah...

breakfast- hot oatbran made with vanilla soy, fall spices, pumpkin butter, and maple syrup. a banana + pb and co cinnamon raisin pb, coffee, and orange juice
snack- apple + cashew butter, a few medjool dates
lunch- ezekiel wrap made with tofurkey, 2 flavors of hummus, and veggies; alongside i also had a pamello
snack- vanilla soy yogurt, pumpkin flax granola, pumpkin butter, and cinnamon
dinner- mock duck and vegetable stir-fry, basmati rice + bragg's
dessert- maple cake with chocolate buttercream frosting (i made this for halloween, so i had to try it first!) yummm!

I am eating leftovers from dinner last night for breakfast.

I roasted a butternut squash, diced it, added some light kidney beans, onion, garlic, Chinese 5-spice powder, chile flakes, brown rice vinegar, tamari and a little agave in some very light veggie broth.  Served over coconut rice and topped with cilantro.

Dinner:

Possibly sundry candies and chocolates...maybe something involving cheeze sauce.  >:D

Today is not a healthy day.

Methi is my absolute favorite spice, so this methi pickle is at the top of my list for chutneys.

I made millet for lunch! And it worked and it was good and...

B- blueberry bagel with EB, a pear, glass of soymilk
L- millet with flaxseed oil dressing, steamed rutabagas with a little EB, glass of soymilk
Snack- chai latte

Dinner will likely be toast or something, but I'm proud of myself for actually cooking (and adding the oil and EB). I'm eating much better these days, much healthier, and much... more (which is good for me, as you may or may not know).

Oh gah, I'm probably going to weigh 20 pounds more tomorrow.

Peanut butter cups
Scallion Pancakes
Oven baked "fries"
Newman-Os
Vegan sugar coated fruity gummy bears

I'm also probably going to have to eat salad all day tomorrow to make up for this.  :o

Hi wassernixe! I love that you've jumped in to all the threads!!

I have 10 pounds of tomatoes getting ready to go off, so I'm going to make a quick tomato sauce (ILOVEYOU, VITAMIX), and the lunchbox fondue. I'm going to have some leftover red peppers, so I'll prob make a batch of uncheddar later (or tomorrow).

I made millet for lunch! And it worked and it was good and..

I had millet yesterday! I mixed it with ground cashews and fried onion according to a new recipe, made some patties out of it and attempted to pan-fry them, but they got stuck to the pan, as usual ._. I'm starting to think I'll never be able to master the art of pan-frying. What I managed to salvage was pretty tasty anyhow.

Breakfast - Steel-cut oats, 1x banana, Veg1 vitamin supplement and a tablespoon of raw flax oil (yum!)
Snack #1 - 1x apple, 1/4 cup cashews with sultana raisins
Snack #2 - two slices of toast with vegan margarine and Marmite (yeast extract spread)
Snack #3 - fresh baby carrots and radishes with poppyseed vegetable dip
Dinner - Pasta e Fagioli with side salad (pic below)

There might've been a glass of soy milk in there somewhere too, I forget :O

All in all, a good day for me, both food- and other-wise... And I still have some dinner leftovers to munch on before calling it a day :D

Did you do it in a non-stick pan? I typically stay away from non-stick, but I have one that I use for dosai, latkes, and homemade veggie burgers. I'm not very good with shallow frying, so the non-stick makes it a little more idiot proof for someone like me. :)

The doomed recipe in question, like most of the things I cook these days, was taken from the book "Vegan Cooking for One". A millet patty indeed!

You're right, it wasn't non-stick! It was stainless steel. I think I have a somewhat irrational fear of Teflon, so I haven't used any of those pans in years! D: I find for veggie burgers the "hot pan cold oil trick" works sometimes to prevent sticking, but I haven't gotten the timing down pat yet, so it's still always a gamble.

But yes, the pan is definitely the problem. I shall have to do more research on the subject, maybe there are alternatives, or esoteric frying techniques that I have yet to discover.. :O

Breakfast was Thinnest (2.5 mm) Flat toasts ( Khakhara) smeared with tantalizing NJ green chutney and chickpea snack.
Lunch will be leftover spicy lentil hotchpotch with sauce.

I finally got round to eating breakfast at 11 or so: Homemade tomato sauce, a bit of lunchbox fondue, wilted spinach, and two "meat"balls, all mixed together. Quite nice!

Lunch is prob going to be brussels sprouts and/or ratatouille. i've got lots of fresh veg in the fridge I need to cook up soon.

Breakfast: I traded the traditional one oz of sad ww bread for one ounce (wellll, ok, a tiny bit more) of black German bread with sunflower seeds in it. Yum, real toast.

And I just made a litre of non-mayo Spanish potato salad with red onion, tomato, and both kinds of sweet bell pepper. And some pan roasted oyster mushroom strips, since there were some left over in the fridge. You dress it with oil and vinegar. I used malt vinegar since I happened to have some.

I had toast dipped into leftover mushroom gravy for breakfast this morning :P

Half an apple for snack and a taste of the hummus I just whipped up.  For lunch I'm going to have a mushroom sandwich, my absolute favorite sandwich in the whole world!

Dinner is undecided but it's turning out to be a shroomy kind of day and I like it:)
