What did you cook / Eat today? .....A question to drool

We can share in this place, our daily intake of what we cooked and ate.This can be Breakfast, Lunch or Dinner.
This can be a real fun thread if people post the photographs too.

Today I prepared Fawa beans-Potato spicy curry and Rotis (Indian breads are my wife's department)
Ate with leftover rice and Moong beans spicy curry and Naga chutney. :)>>>

My meals are so insanely random today!

Breakfast:
My oatmeal mix with chocolate hemp milk
cucumbers with silken tofu/horseradish dip

Snack:
Banana

Lunch:
An entire jar of hearts of palm
1/2 container of crunchy bean sprouts with salsa
portobello mushrooms with pumpkin-tomato sauce and spinach

I also have for more snacks (Tuesdays are a LONG day for me):
a green bell pepper
an orange
1/2 cucumber

Today I have eaten mostly curry.  It was probably not the most healthy, but it was super yummy.
We had a Diwali lunch at work and there was soooooo much curry and samosas and other yumminess.  Besides I had to eat tons and tons as the organisers had made sure there was plenty of vegan stuff for me - at least that's my excuse and I'm sticking to it.

Dinner was also curry (there was tons of leftovers)

Holy crap, eating this for dinner and WHOA. Sosososo tasty. I had it at a party two years ago (lacto version) and I remember loving it, but my vegan (slightly modified) version is even better! Mmmmmm.

Tuesday

Breaky: coffee and toast
Lunch: pesto pasta salad
Snackage: orange juice and crackers
Dinner: chili (http://vegweb.com/index.php?topic=10454.0) that just wasn't hot enough because I used my last ripe Black Dragon in the Cuban black beans.  All the others are still green and so are the Tabascos.  I want fresh chiles!  I NEED fresh chiles!

Made a big pot of "pisto manchego" today, some for supper and some to freeze. The longer you have it, the better it is. It's a sort of stew made with onions, peppers, eggplant etc. in tomato sauce. You can use zuke instead of eggplant. It's long-slow-simmered into lusciousness. I submitted a recipe for it "blows and scores" ago, but it hasn't come through yet.

sounds like sambar minus the spices. Neverthless looks very interesting. Must give it a try.

Heh, no recipe to speak of... Just sauteed garlic and onion in the pan, threw in some pureed cooked tomatoes and a can of pureed plain pumpkin. Added thinly sliced portobello mushrooms cooked until they were tender, salt, pepper, then threw in a big handful of spinach to wilt. Voila!

breakfast:  oatmeal with banana and maple syrup
snack: 2 brownies
lunch:  wrap with a sort of slaw (red cabbage, shredded carrot and granny apple in apple cider vinegar) and a dijon, mustard, dill, nut.yeast mix for the spread - pretty much like what the cauli-poppers are tossed in! , also a few chunks of pineapple and a few raspberries.  This was an awesome lunch ;)b

dinner:  made the Portabella Steaks with Gravy and Hearty Biscuits recipes from this site plus some steamed asparagus with lemon pepper and garlic salt.  Wow, I don't usually cook all "down homey" like that but it was worth it.  Awesomeness.

i had oreos with peanut butter on top for a snack... awful!! haha.  i mean.  in a really amazingly unhealthy yet tastey way.  and then tofu loaf, gravy and collards with black eyed peas for dinner.  yum!  the gravy and collards were leftovers.  so dinner was super easy and extra awesome.  yay leftovers!

Lunch: pasta e fagoli (canned soup because I'm trying to get rid of stuff in the cabinets that's been there forever)
Dinner: salad (because I needed something green)

Rice macaroni with tomato and mushroom sauce. (I bought it out of curiosity--the pasta I mean--but the texture is weird.)
Roast pepper strips with red onions and tomatoes

Tonight is soup! Definitely soup weather. I'm thinking creamy asparagus or mushroom something...with of course a spoonful of miso in my cupful.

I had "meat"balls and tomato sauce for breakfast (don't judge me!!) with a banana, leftovers of the Afghan pumpkin I linked to for lunch, and beets and an apple for a snack. MUST. STAY. OUT. OF. CANOFFROSTING.

I just made Kung Pao Tofu with peppers, broccoli, onions, and cashews.  I'm going to have it for dinner tonight...woo!
