What did you cook / Eat today? .....A question to drool

We can share in this place, our daily intake of what we cooked and ate.This can be Breakfast, Lunch or Dinner.
This can be a real fun thread if people post the photographs too.

Today I prepared Fawa beans-Potato spicy curry and Rotis (Indian breads are my wife's department)
Ate with leftover rice and Moong beans spicy curry and Naga chutney. :)>>>

Actually, not complicated at all. Okay, more complicated than crumbling and marinating tofu, but not difficult by any stretch. I made a double batch in a matter of minutes last time.

Okay, meatballs finished, my hot cereal mix is finished, and now I'm roasting up a couple trays of tomatoes for oven-dried tomatoes. Next up is the pasta sauce for my dinner party tonight!

I just made a big pot of Delicious Pakistani Dhal from here, only I used split mung beans instead of red lentils. It's for tomorrow but I couldn't help tasting!! I was surprised because the beans had turmeric powder on them; is that normal? I always rinse before cooking and it dyed the water that bright yellow. DH said "I can smell the turmeric" which surprised me because I didn't think he would identify it like that. I don't use a lot of turmeric usually so how did he know? LOL

For lunch it was garbanzo beans with spinach, one of my student's moms made it for me. She knows I'm on a diet so she sent a big batch to freeze in portions. Should see me through at least 3 weeks since I only get garbanzos twice a week these days. She sent me some arroz con leche too. Which is sweet considering I've seen her about twice in my life!

Peach and berry fruit salad with ground flax, cinnamon and sunflower seed milk for breakfast ( kind of a staple for me, fruit and raw nut/seed milk).

An orange for snack.

For lunch, and the rest of the day most likely, I'm eating the caramelized onion and sweet potato pizza I've been wanting to make for awhile now!  It is delicious, especially with the sliced black olives I sprinkled on it.

For lunch, and the rest of the day most likely, I'm eating the caramelized onion and sweet potato pizza I've been wanting to make for awhile now!  It is delicious, especially with the sliced black olives I sprinkled on it.

Well, since it is SNOWING here, I had a massive cooking day. I'm good for a couple of weeks.

This is what I made:

Garlic and Greens Soup (spin offa CPG's, 'cept I use lentils intead of potatoes) - to freeze
Sharway's Chipotle Black Bean Soup - to freeze
Roasted Garlic Sweet Potatoes
Grean Beans w/ Garlic and Chilies
Whole Wheat Bread - to freeze
Japanese Spinach Salad (I think its called Gomae-ae)
Soba Noodles w/ Garlic Sauce
Carrot Pickles
Brownies - to freeze
Roasted Butternut Squash
Homemade applesauce
Corn and Black Bean Salad
Wild Rice Salad w/ Cranberries and Pecans

aaaaaaaand I cut up all the last of my bell peppers (13 of them) to eat this week, since I tore my plants out yesterday.

^it was snowing here today too! cooking is the perfect way to spend the day when its too cold oustide!

breakfast: banana pancakes (from la dolce vegan) with real maple syrup, eb, and banana slices. glass of orange juice, cup of coffee
lunch: a pb&co cinnamon raisin pb and banana sandwich and a honeycrisp apple
snack: rye crispbread crackers, 2 different hummus varieties, and carrot sticks
dinner: stewed lentils and tomatoes (from Ina Garten, its delicious!) with frozen peas, and a french bread roll from the bakery
snack: a bowl of peanut butter bumpers cereal, sliced banana, and vanilla soy milk

Sunday

Breaky: coffee and toast with Earth Balance
Lunch: mushroom and jalapeno pizza
Dinner: Cuban black beans and yellow rice (I dropped a whole Black Dragon pepper in them to crank up the heat level and boy did it!  Ah, the pleasure and the pain!)

It was really not a good food day for me since I basically ate no veggies and no raw. :(

pineappleprincess:  It's not much of of a recipe!  Very good though...I posted stuff about it  with pics in the "sweet potato on pizza?" thread if you want to check that out still.

NJA:  Thanks!  iIt is very yummy and healthy.  I mix up the fruit combinations depending on whatever fruits I have on hand.  The flax addition is my way of trying to get in some omega's.

breakfast:  a pinto bean-pineapple burrito with sweet potato  and nut.yeast sauce  ( i know, i'm bad)

lunch:  oatmeal with the freaking works!  blueberries, banana, cinnamon, maple syrup

snack: carrots with a "cheese" dip

dinner: some Pakistani Lentil Dahl with sprouts and red cabbage - did not like it though, unfortunately.  WAY too bland for my tastebuds.

L: leftover "hamburger" sandwich with lettuce and pickle
S: herb and vegetable popcorn and banana
D: Pasta with creamy garlic sauce, portabello mushrooms, chiles, and sweet potato

Hm....I'll probably make some dessert...maybe chocolate chip cookies...

I'm proud of myself - I actually "made" something today...

B- mix of cereals, soymilk, apple, PB
L- mock chicken salad sandwich (I bought Nayonnaise this morning, and had forgotten how good chickpea salad sandwiches are! Soo yummy)
S- a London Fog from Starbucks (not that good, actually) and a couple of dates
D- toasted blueberry bagel with EB and tahini
S - chocolate soymilk, heated in the microwave

Ok, so the chickpea salad isn't really much - it's not cooking or anything, but still! You can't deny the tastiness. I think I'll make soup tomorrow though.

Last night dinner was festival food .

Sweet rice . Another spicy rice with my usual NJ chutney pickle and spicy fenugreek flat bread.......Yummy. :)>>>

So far today morning b/f was toast and peanut butter.
Was tempted to make it a HOT affair but thought agaisnt it
and instead , added a dollop of Grape Jelly (enough to  grease a crankshaft of Titanic.) Ahhhhhh feeling  :sleep: already.
