What did you cook / Eat today? .....A question to drool

We can share in this place, our daily intake of what we cooked and ate.This can be Breakfast, Lunch or Dinner.
This can be a real fun thread if people post the photographs too.

Today I prepared Fawa beans-Potato spicy curry and Rotis (Indian breads are my wife's department)
Ate with leftover rice and Moong beans spicy curry and Naga chutney. :)>>>

Yesterday:

Breakfast: Oatmeal with brown sugar, cinnamon, and pluot
Lunch: Leftover revamped pasta casserole with creamy tomato sauce, peppers, and carrot
          apple
Snack: BBQ tofu cubes with a chile pepper and green onions
Dinner: Taco Del Sol giant veggie burrito with extra guacamole, rice, two kinds of beans, lettuce, tomato...etc.

Meals are becoming quite difficult b/c we are very low on food!

I think I'll make some focaccia!  ^-^

AHHHH!  I had steamed artichoke leaves with goddess dressing to dip for breakfast and a couple nori rolls stuffed with greens to finish off the dressing and OMG! something in what I ate has given me some itchy skin rashes all over :'( :'(  Inside my ears even itch.  The food was good but SO not worth this misery.

I speak of this:

It's a hybrid cross between a plum and apricot..more like a plum. They are sweet, and sour..and very juicy. I don't usually put them in oatmeal (and it wasn't very good), but it was going squishy, and I wanted to use it.

There was a sudden change in last night dinner menu.

Prepared Rice with green lentils and nuts. It was spiced but not hot.
My son prepared Stir fried vegetables ...yummy

Needless to say that it was enjoyed with a spoon of hottest chutney pickle on this side of US.
All chased down with a tall glass of Sherbat.

Sunday
Breaky: coffee and wheat toast
Lunch: Tuscan vegetable soup
Snackage: banana, raspberries
Dinner: Chick-un burrito

I was bad with all the non-raw food yesterday  :(

Last night, dinner was SAMBAR (mix veg) and plain Ponni rice.
Today, lunch was same as was kidnapped for shopping by  missus  :(

Had some leftover faux-makhni sauce I made the other day, so I threw that over some steamed veggies for breakfast. Greek salad (with BCG's tofu feta) for lunch, alongside an apple, a banana, and a slice of homemade apple bread.

breakfast smoothie made with soymilk, 2 bananas, half a paw paw & a handful of grapes
lunch bowl of cream of broccoli soup, 2 or 3 ryvita with cheezy home made spread  handful of grapes
dinner homemade onion, mushroom and faux pork curry with brown rice and a tall glass of soy milk.  Dessert of 3 small squares of dark chocolate.

Also about 3 litres of water and 2 cups of coffee throughout the day.

Breakfast: soyrizo and hashbrowns in sprouted grain tortillas
Lunch: cauliflower, carrot, and black kale soup, and one piece of sourdough bread

dunno what else may come......

Snack: A BUNCH of vegetable and herb Yaya's popcorn, banana, chocolate soymilk
Dinner: I'm going to make a pasta casserole with vegetable pasta shells, Vegan Gourmet mozzarella, and Yves "Canadian bacon," and maybe a salad with "Caesar" dressing

I want half of the things you guys are eating!!

Breakfast: whole wheat bagel & coffee
Snack: piece of dark chocolate
Lunch: clif bar & an orange
Snack: pretzels
Dinner: these veggie-phyllo dough baked pastry thingys...going to go make them now!

Away from my normal work place this week...so I need to prepare stuff that doesn't require a fridge or a microwave  :(

I baked apple cider cupcakes (not from vctotw) with apple cider glaze, chai cheese cake and cooked carrot ginger soup, garlic mashed potatoes and steamed brussel sprouts.

What recipes did you use for the cupcakes and carrot ginger soup?  They both sound delicious!

the cupcake recipe I just created today and the soup is one of my own too but my son says that it is too spicy from the ginger ;)b I love ginger.

6 good size carrots scrubbed and cut into chunks
2 medium potatoes
1 onion
2 or 3 cloves of garlic
2 tablespoons minced ginger
olive oil
salt and pepper

saute onion and garlic in olive oil for a few minutes add ginger and saute a few more..add carrots and potatoes and and stir around a bit...add enough water to cover and bring to a boil, add a little salt and pepper..simmer until veggies are tender adding more water if necessary to keep veggies just covered. I used an immersion blender to make it creamy but still a little chunky...a food processor or blender will work also..or even a potato masher. If you use a blender let the soup cool a bit first.
