I've been hearing there are vegan food trucks around. I have never seen one.
If you owned a vegan food truck what would be your specialty?

If you want to try one, they generally have websites that have their weekly schedule posted. Google "vegan food truck near ".
The folks from Cinnamon Snail are the best!

My idea,
Belgian Waffle, Crepe, Pomme Frite and hands down the American Sweet Potato Fries your lips will ever touch *shhhvegan* Truck.
The bio diesel sprinter would be plastered with belgium ramparts.

I think a vegan sushi truck would be legit, i would have a list of fillings and roll it and cut it right before your very eyes :)
Obvs a taco truck would make sense, i can make some bomb tacos/ burritos/ taco salads/ tostadas/ tamales/ empanadas/ tortas... :)
Maybe a ramen/ noodle/ teriyaki bowl truck? that would be cool as well... especially in not so sunny so cal areas...

All your ideas are good! I like that the sushi and noodles would be easy to customize, and they're all pretty simple because of the shared ingredients. ;)b
sigh. I wish there were one near where I live now. In Madison though, there was the Dandelion Food Cart. http://www.thedailypage.com/daily/article.php?article=22834 I never got the chance to visit it (they have someone limited hours), but it sounds yummy.
Austin is littered with them! I haven't tried any yet, though :(
I've always wanted to start a vegan ice cream parlour. Not necessarily in a truck.... but in general.
