Vegan cooking for non-vegans.

Hello! I'm having  a couple of old friends over for dinner in a couple of weeks. I am vegan, they are meat-eaters. One is a very picky eater who absolutely hates vegetables. The other is pretty adventurous, as far as food goes, so she'll try anything.  My "picky" friend does love pasta and soup. She's also from a large Italian family, so she  knows good Italian food. Any suggestions on what I should make?

I have a friend who is also horribly picky and doesn't care for vegetables. We had him over for dinner one night and I made a Vegan lasagna, and he actually went back for seconds! We used Daiya Cheese (the shredded cheddar and mozzarella kind), crumble tofu into really small pieces so i resemble ricotta, and made our own homemade marinara sauce. I love broccoli, carrots, and onions in my veggie lasagnas, but not everyone does, so it you can to leave it out. We just layered, sauce, noodles, veggies/tofu, cheese, and repeat. I can't remember what we cooked it at, but the lasgana noodles should have a recommended temp and time. Oh, and I'm gluten-sensitive, so I actually used DeBoles Rice noodles that you just cook in the oven. It is seriously delicious, and my friend was raving over it!

Vegan lasagna is a great suggestion, and I love daiya cheese.

Even a vegetable-hater, if they're of Italian stock, should love minestrone. Cut the veggies up kinda small, lean heavy on the beans (green and dry both) and taters, and ramp up the herbs and seasoning. Tomato paste is definitely your friend for a minestrone.
