Two recipe reviews

I made the Sloppy Steve's from this site, only I used tempeh instead of tofu. It's really good this way! I like it better!

I followed Isa's directions for the Tempeh Sausage Crumbles in Vegan with a Vengeance. I broke the tempeh up into small pieces, poured water over it to just cover it & simmered until all the water was gone. Then I moved the tempeh to a plate. I added oil to the pan, sauteed the onions. When they were ready, I put the tempeh & the rest of the ingredients into the pan & simmered for about 30 minutes. This is a really good recipe if you substitue canned tomatoes for the ketchup.

I will say this -- only use 8 ounces of tempeh for the 16 ounces of tofu. I sub-ed 16 ounces of tempeh for the 16 ounces of tofu & had way to much tempeh. So I had to add quite a bit more tomato product than the recipe calls for. I used a 28 ounce can of diced tomatoes & another 16 ounce can of tomato sauce.

I also made the Orange Glazed Beets from VWAV. They were really good, especially in salad. Howe'ver, if you like your beets really soft, you will have to cook them way longer than she states. I cooked them for almost an hour & had to add more orange juice as I cooked them. Next time I will use the pressure cooker to make them.

Disorderly Lentils (aka Sloppy Lennies)

2 cups red lentils
4 cups water
1 onion, chopped
1 green bell pepper, chopped
1/2 cup grated carrot
2 cups tomato sauce
2 tablespoons soy sauce
2 tablespoons parsley flakes
1 bay leaf
1/2 teaspoon chopped fresh garlic
1/2 teaspoon basil

Combine all ingredients in a medium pot. Bring to a boil, reduce heat, cover, and simmer for 30 minutes. Serve over toast, fat-free crumpets, fat-free English muffins, or whole wheat rolls. Serves 6.

Baypuppy, I am hooked on the Tempeh Sausage Gravy over biscuits! Howe'ver, I sneak several bites of the tempeh sausage before making the gravy! I can see where it would be good on so many things. We are making pizza this weekend & I'm going to add the crumbles to one of the pies.

And yes, we need more emoticons!  8)
