Well I finally got a digital picture of Tofu Gan taken for all those who have asked me what it is. I am surprised that we have it in this relative backwater and y'all don't have it in places like NY and Chicago. It's smoked and pressed and the only tofu that I will eat cold straight out of the package.
Kudos to my student Cristina who took the photo...now to see if I can upload it.... ::)
It is so nice that you can find it. I miss them so much that I have not have them for so long. I too can't find it locally unless to drive one hour one way to Reno's Asian market but they don't have it all the time too. The closest thing I can find to replace tofu gan is baked tofu but not the same. It is a daily staple from a Chinese kitchen, I remember when I grew up in Taiwan, my mother always made it.
My mother usually slices them and stir fry it quickly with little oil. After it heat up, drizzle a little soy sauce, add a hand full of toasted peanuts. Only after it plated, my mother will add some chopped cilantro or green onion then drizzle some sesame oil. Very yummy Chinese way.
Doughbunny, that sounds delicious! When I first open the package, I like it raw, sliced in half, in a sandwich: wholegrain bread (ours comes with sunflower seeds in it, yum), "mayo", lettuce and roasted red peppers--and a couple of squares of tofu gan, split open.
Your way sounds wonderful too--I'll try it when I open this package.

I've never thought to put it in Sandwich, I may try it too. When I grew up in our household total 8 people. My mother learn to volumized food. If you thin slice those tofu gan enough, you can fill a pretty big plate. I forgot to add if you like it spicy. Add chili pepper or thin slice celery together to stir fry.
it looks like the flavoured baked tofu they sell at most HFSs...

This is not baked but smoked. Dark brown outside, pale ivory inside. VERY pressed, only about 1/2 in ch thick. The package in the picture is stacked 2 deep. There's another brand that comes in a silver and orange package but I like the transparent package better.
