I looooove sushi but I'm incredibly bored of california vegan rolls. I need inspiration, guys. Anyone got any delish sushi fillings that don't involve avocado, carrot, or cucumber?

tempeh is one of my favorites.
you can pretty much stick anything in sushi, that is what is so amazing about it.

Argh! That's right, my WF staple sushi is avocado cucumber, but down the street at the sushi place, it's shiitake mushroom with avocado... YUM.

Ume plum paste (or slivers of ume plum) with cucumber and carrot. Also, I like making the not-rolled-but-shaped kind with blanched slices of carrot or snow peas on top. Colorful and delish!

Maybe try using a different grain as well! I ran out of sushi rice and made some sushi with quinoa the other day. It was delicious!

i went for sushi last night, and on the menu they had a roll with fried banana (and 2 or 3 types of fish) in it... i thought that was pretty interesting! i was going to ask if they could omit the fish or sub something else but they get really flustered when i try to make changes to the menu items.

Definitely make tempura veggies and then roll them up in sushi! Oh that is so good. What about blanched broccoli stems sliced thinly? a chiffonade of chard with some button mushrooms? Artichoke hearts and spinach with a touch of vegan mayo? Butternut squash tempura? Sugar Snap peas and some red peppers? Snow peas or slivers of gently cooked cauliflower.
Drats, now I have to wait one more day to get sushi. *mops up the drool*

i judge a sushi place partly on their vegan ingredients available. one time i went to a place that all my friends loved, but they only had like four or five different veggies!!
i like asparagus, shiitake, and macadamia. i always ask first if they have macadamia or cashew, because the texture is amazing! and of course if you are making your own you can experiment with any number of ingredients!

The Post Punk Kitchen (www.theppk.com) has some really good vegan sushi filling ideas. I usually make sesame fried asparagus. Instead of making a roll I make a ball of sushi rice, put it in top, and wrap it with a strip of nori... kind of how it's done with the slices of fish.

I like to slice tofu or tempeh bacon-thin and pan fry it in orange "chickn" sauce...then put it with red peppers, bananas or pineapple, and asparagus. :)>>>

My bf likes his with peanut butter.
Some things I use in sushi, other than cucumber and avocado, are sweet potato, cooked shiitake mushrooms, cooked asian eggplant with teriyaki sauce, baked tofu, bean sprouts, snap/snow peas, carrots, celery, jicama, daikon, scallions, and seitan.

vegan cream cheese inside, with veggies (mushrooms, peppers, spinach, etc). Friggin' yummers!!!
Or mix it with some of your 'no no' list (avocados, carrots, cucumbers), so that these items are refreshed and don't seem so boring.
You could also try tapenade in the middle. Never tried it myself, but you can't go wrong with tapenade, IMO.

vegenaise, vegan bacon bits or fakin bakin, slivered tomato, shredded lettuce = BLT sushi!
bamboo shoots, water chestnuts, slivered white onions, tofu = white sushi!
tempura veggies (eggplant, pumpkin, sweet potato, carrot, broccoli, onion etc..) = crunchy sushi!
thai green curry paste, shredded coconut, cilantro, green onion, carrot, tempeh = Thai sushi!
slivered chilis or sriracha, mint, basil, cilantro, mushroom, cucumber = Vietnamese sushi!
black or wild rice, tempura eggplant, wakame, hijiki seaweed salad = black sushi!
pineapple, mango, papaya, shredded coconut, mint = tropical sushi!
corn, refried beans, chili powder/cumin, onion, tomato, cilantro, cheese/nut. yeast = mexican sushi!
other fillings to experiment with (not necessarily together ;) ):
vegan shrimp
bbq sauce
relish
noodles
seeds/nuts
etc.. etc.. :)
