Hi. I was thinking of making this for dessert for company tonight.  But there will be a bunch of children and I was wondering what kind of texture the shredded coconut gives to the cake. 1 1/2 cups sounds like a lot and I was wondering if it makes the cake very chewy.

Does anyone have any experience with this cake with young kids?
