Peach "Ice Cream" Recipe

Peach "Ice Cream"

2 cups Silk vanilla soy milk
2 cups raw cashews
1/2 lb. - 1 lb. frozen peach slices
1/3 cup Tofutti soy "cream cheese"
3/4 cup maple syrup
1-2 tsp. vanilla

Note:  For best results, make sure all ingredients are cold.

In a blender, blend cashews with one cup of milk until completely smooth and creamy.  Add other cup of milk, maple syrup, peaches, vanilla, and "cream cheese."  Blend until peaches are of the consistency you prefer.  (Add them last if you like pieces of fruit in your ice cream.)

Freeze according to your ice cream freezer's directions.  Take whatever is left from your initial tasting and freeze in a freezer-safe container.  One it is frozen hard, the consistency is perfect for scooping!

holy quacamole, Robin! my husband & I were just talking about making "ice cream" today. Then I see you've posted this recipe...it looks positively divine. Thanks for sharing it! I have to dig out my ice cream maker and get crankin' (figuratively speaking).  :D
