Omelet

So omelets are my favorite breakfast ever.  What is a good soy-free mid/high protein vegan variation on the beloved omelet?

I think the vegg is soy free. It just came out and is a vegan egg yolk type thing.

I found a nice alternative to an omelet I thought I'd share.  You make a batter with chickpea flour and water (kinda thin like pancake batter) and lotsa garlicky spices, then cook it in a skillet...Just put your filling in in once it's cooked and serve with some hot sauce or salsa or something.....lotsa protein, same idea as an omelet, and much healthier :)

This is nice. Follow the instructions exactly though, otherwise it fails.

I have made the chickpea flour omelette many times now.  I use 1/2 cup chickpea flour, add ground pepper, cumin, garlic, basil and then slowly add water to get a pancake consistancy.  Then I pour it in a hot griddle with just a tiny amount of oil or spray and spread it around to get a nice big circle.  When it starts to bubble like a pancake, I add my veggies (mushrooms, tomato, leafy greens, onion, etc) on top and then fold it over with the fillings inside so it looks like an omelette.  After a minute or so I flip to the other side.  I have eaten it this way and have also added salsa and also various vegan gravies as well.  This is a high protein, relatively low calorie low fat delicious omelette that is very filling.  Besan/chickpea flour works very well because it isn't sweet at all but has an eggy savory taste.  Ground black pepper really brings out the flavor too.  And it's soy free!

I make besan chila fairly regularly although it is more like a pancake than a true omelette. A bit more water could likely get you the ocnsistency you are looking for..
