Nutritional Yeast

Greetings!  I am wondering if nutritional yeast is a good product to purchase.  I know it can be used to make cheese sauces but how else may it be used?  And what flavors of cheeses does it mock?  It's quite pricey, so I wanted to be informed of its versatility before purchasing, as I hate wasting food.  Any feedback will be appreciated!

i always buy it in bulk and i eat it on a daily basis. i usually just sprinkle some on my toast for breakfast. i try to squeeze a tablespoons worth at every meal of the day@!

I love the stuff; it's a very unique flavor, but I liked it immediately. I know some people don't care for it at first, so give it a few shots before you dump your can/bag/barrel into the garbage.
If you do buy it, bulk is the way to go; and when you pick it up, I'd highly recommend grabbing yourself some raw cashews and arrowroot powder, and then making Dragonfly's Uncheese Mix the second you get home. When used in this cheese sauce, it has a mild, cheddar flavor, which is great for nachos (add salsa), or for mac and cheeze. (Steamed broccoli and red pepper flakes go into mine.) That's really the only recipe I've used the stuff in, but I do sprinkle it plain onto a lot of my food. Anyway, I recommend the stuff, and I DEFINITELY recommend Dragonfly's recipe.

It killed my post-holiday-party hangover this morning.  Popcorn with nutritional yeast, and freshly juiced apples and ginger, for breakfast?  Sure!

I make a salad dressing using nutritional yeast, and I think it's REALLY good...... 
Unfortunately, I don't have a recipe----and I've never written down what I do----it's sort of a go-by-taste-and-consistency project. 

Last time I made it, I started out w/ 2 tbs. of nutritional yeast, then added 3 tbs. tahini, 1 tsp. olive oil, 1 tsp. flax oil, 1 tbs. apple cider vinegar, 1-2 tbs. water, 3/4 tsp. soy sauce.  I think that's it......although it's entirely possible that I added extra tahini/oil/yeast/vinegar at the end, to taste.
My best advice to you is to find whichever proportions YOU like best (taste it first, then modify.....) and go with it.  I'm sure that chopped parsley, chives and/or cilantro would be great additions.  Perhaps a touch of lemon juice......or maybe a little sweetener....... :)

Obviously if you are counting on Redstar nutritional yeast as the main source of b-12 in your diet, you should probably add it to more than just salad dressing so as to ensure that you get the amount you need.  :)
