Making Dehydrated Vegan Meals... Help Please!

I'm going to need some recipes for vegan dehydrated meals.
Something like this cookbook: http://www.northernoutpost.com/ which is not vegan so I won't be buying it.

My husband will eventually be going back to... well, let's say an 'unpleasant place' (for the 3rd time) and now that he has really gotten settled into his veganism (and loves it) this next time I am actually more worried about his health, than his safety... I know, I know, totally ridiculous but I can actually control the health element. I don't want him to have to eat the icky and unhealthy food that our government provides him any more than necessary. Yes, he has veg options, if you count green beans floating in fatty who-knows-what kind of broth etc. Other than that lovely staple, I'm planning on sending him packages with raw energy bars, raw nuts, homemade breads, ground flax, healthy cookies etc. But what I'd really like to do is get whole meals together. We have a Food Saver (food vacuum packer) so I was thinking along the lines of a package consisting of:

Meal 1:
Whole Wheat tortillas
The dehydrated Spicy Bean Chips at http://www.northernoutpost.com/
and his favorite hot sauce

Meal 2:
Dried Spiced Eggplant Slices
Homemade Tomato Sauce
Nutritional Yeast/ Sesame Seed Parma Flakes

You know, that kind of thing... vegan meal-in-a-box!
::) It's the best I can do...
I figure I can dehydrate and mail stuff in between writing my congressmen and attending protests. *sigh*
So, I don't know anything about dehydrating... what's the best dehydrator?? Do I even need one? Will the oven work?
As he will not be going back until early next year, I have plenty of time to practice the recipes (and I will have to practice/test them, I don't want to send him things that end up being foul!) I don't know what else to do. I'm not even sure this will work at all... The whole thing makes me want to cry. Does anyone have any recipes? Any ideas for raw, mail safe foods? Or any ideas at all for this horrid endeavor?
