Ideas for Almond Meal Desperately Needed!

I just started making my own almond milk (Heavenly BTW) but now I have all this leftover almond pulp and don't know what to do with it! I dried some out and made it into "flour" and froze it... I also have some fresh almond pulp in the fridge... And I will be making more "milk" tomorrow!!!

Basically, I have been scouring the web for ideas but would appreciate any links, recipes, ideas, substitutions that have worked for you. I hate to waste something I know can be transformed into something beautiful!

I'm not sure exactly what the texture is but it sounds like something that could be used in body scrubs? With coconut oil/coco butter or something

It also sounds like it could be good in a breading mix for baked/fried tofu.

i do have some thoughts on potential ideas... cinnamon rolls, pie crust, dessert type breads possibly... i don't have the best baking/ dessert making skillz though, so i don't really wanna "wing it" and waste food since i am lacking funds for the next month...

Could you add some light oil and turn it into "almond butter"? Like whirl it in a food processor or something. I dunno if that will work, it just ocurred to me...

I put a serving in a dish, sprinkle on some raw cocao nibs, drizzle with agave and just eat it like that for breakfast or whatever.

I know I've seen gluten free cakes that are made with almond meal instead of flour, but I don't know if you need to do anything special with it to make it rise.  Maybe look for gluten free recipes for more info.

You could sprinkle it on cereal or mix it in oatmeal or whatever.

Vegan Brunch has a recipe for smoked almond gravy.  It's supposed to be made with smoked almonds (obviously) but you could use plain almond meal and add some liquid smoke.  If you don't have the book I can send the recipe to you.

ya most of the recipes i see are on gluten free blogs... i made a pie crust today and it was an epic fail... hopefully to pumpkin pies i made are still edible... damn

i am almost afraid to experiment cause i usually screw things up if it isn't an ingredient i've grown used to cooking with...

ALMOND SCONES!!!!!!!!!!!

Sub 1/2 cup of the flour for almond meal, add some almond extract. Make a glaze out of almond milk, amaretto, EB, and powdered sugar. Thank me later.

It works great in almond muffins.  Depending on how moist it is, you may have to adjust the amount of liquid.  I haven't tried this yet myself, but you can dry/toast it in the oven and use in things like granola.

You can freeze it for later use.

Most of it I have frozen since I didn't know what to do with it.

I think I screwed up the pie crusts because I used fresh almond meal, I didn't dry it out and food process it.

Mix the almond meal with a little agave or maple syrup and chill. Dip in melted chocolate and roll in almond slivers, chill again. EAT.

good idea, you've done it right? it wouldn't be too crumbly? i can just see my stupid self putting it in the chocolate and the whole thing disintegrating which would mean: EPIC FAIL

so far i made pumpkin pie with almond meal pie crust, the crust was a fail:

i also subbed a little over half of the AP flour for almond meal (I baked the damp pulp at 350F for an hour and whizzed it around in my magic bullet to make a fine flour) to make VWAV's Pancakes... turned out decent... just glad to use up some pulp for the most part:

That pie looks gorgeous, didn't the crust taste good? It doesn't look like it was too awful crumbly, at least you got a slice on the plate...

the crust was ok... yes, way too moist and crumbly... i pretty much removed any part i could easily as i was eating it... the pie filling and cashew cream topping were magical

This recipe I've actually made, and it's awesome--it is raw, but that makes it easier and faster than cooked cinnamon rolls, IMO: http://goneraw.com/recipe/cinnamon-rolls

In the past, I've dehydrated it and used it as a flour. But since it doesn't have gluten it's not a good 1:1 substitute for wheat flour, so you need another binding agent.

Mixing the dried flour with some nut butter, sweetener, and a little salt and rolling into balls can make a good snack. Dried fruit and/or chocolate chips would be great additions.
