How to get essential vitamins/minerals into a vegan diet and quick recipes for a school lunch

I'm wanting to do a vegan diet but I have a few questions before I test the waters. So how does everyone get the minerals and vitamins that our bodies need like Omega 3, Vitamin D, B-12, C, K, A, etc. etc. And since school time is nearing and I'm usually in a rush to make my sons lunch, I would appreciate it greatly if someone were to throw in a few quick, easy, and delicious recipe ideas I can work with.
