Healthy alternative to Crisco

My family has a generations old recipe for apple pancakes. They taste WONDERFUL but are so bad for you. My mom has sent me (the healthy, vegetarian member of the family) on a mission to make the recipe healthy.
The original recipe called for the apples to be deep fried in lard. EWW. Then the revised version from the 60' replaced lard with frying in Criso.
My mission is to find a "hard" frying alternative. As opposed to just frying with oil.
Any ideas???

palm oil is solid at room temperature. spectrum sells a tub of it in something reminiscent of a crisco tub & it's shelf stable. i think they call it organic shortening. earth balance also makes shortening sticks, so you could probably fry with them as well. those are found in the fridge. coconut oil might be good as wekk depending on what you're frying, because thats a solid oil. hope that helped!
Yeah, I was just thinking cocnut oil. I'll look into the palm oil. Only thing I've used that stuff for is making soap! Thanks for your help. =)
sells shortening in sticks. It contains no hydrogenated fats, and it works very well. You'll find it next to the other Earth Balance in the "dairy" section of your health food store.
Don't use coconut oil...it has a strong flavor that will overpower what you're making. Stick to palm oil.
