I made Vanilla mini cupcakes with chocolate chips for the kids who will come today around my office.  (They are the coworkers kids.)

I do want to make some Chocolate Peanut Butter Cannonballs but have yet to find the time or enthusiasm.  I am planning on eating so much good vegan stuff in Boston its kind of not necessary for me to do anything for Halloween.  hahah

Chocolate chip pumpkin cookies!!!  This one is easy to veganize...I used margarine instead of oil.  They are so soft!  I normally don't care much for cakey cookies, but these are incredible!  Oh, and don't stack them on top of each other if you can help it.  They stick together.    http://allrecipes.com/Recipe/Pumpkin-Chocolate-Chip-Cookies-III/Detail.aspx

Those sound great! What kind of icing did you use on them?

i made my cupcakes and learned i still have A LOT to learn about decorating.  the red frosting was so watery because i added in raspberry pure.  i probably should have rinsed all of the ice off of the frozen raspberries first then juiced them and use just a little bit of the juice and added extra powdered sugar.  but.  i didnt.  so.  it kind of looks like bloody eyes, not red shot eyes, because the frosting is so liquidy.  ohwell.  they taste AWESOME.  so.  who cares.  whatever.  : )

Tofutti cream cheese, but I kind of wish I left them unfrosted. Oh, well, they're for work. Those people will eat anything as long as it's free. (or in the fridge unattended).

I'm trying to come up with ideas because I don't want to make the same mistake as last year. I made jello thinking it was perfectly vegan and it turns out Gelatin is a protein made by boiling cows’ and pigs’ skin, tendons, ligaments, and bones. Disgusting! So instead I've been searching YouTube for tutorials on how to make some good recipes but I got entertained with some Halloween Video Contest and with a parody of Justin Bieber's videos lol
Internet sucks the life of me lol

Even so, I was able to snatch this recipe from some website I found:

Candy Corn

Ingredients:
1 cup sugar
2/3 cup corn syrup (preferably organic, avoid high fructose corn syrup!)
5 tablespoons Earth Balance (or other vegan margarine)
1 teaspoon vanilla extract
2 1/2 cups powdered sugar
1/3 cup powdered soy milk
a pinch of sea salt
Red & yellow food coloring

nstructions:
In a large saucepan, bring the sugar, corn syrup, Earth Balance, & vanilla to a boil over high heat.

Reduce the heat to medium & boil the mixture for 5 minutes, stirring occasionally. After 5 minutes, remove from heat.

Sift the powdered sugar, powdered soy milk, & salt into medium bowl.

Add the powdered sugar mixture to pan & stir to combine.

Let the mixture stand until slightly warm to touch, about 20 minutes.

Divide the dough into 3 equal pieces.

Consider putting on rubber gloves, so you don't stain your hands. Add several drops of yellow food coloring to one piece of dough & knead food coloring into the dough until smooth and color is even. Repeat using red & yellow food coloring (for orange) with the second piece & leave the last piece white, but knead it until smooth. This isn't an easy task & could take up to 15 minutes!

Roll each piece into ropes of equal length (don't roll too thin or the dough will break) and push the three ropes together to form a long rectangle.

Using sharp knife, cut the ropes into triangles. Some will be white tipped & some will be yellow tipped.

Shape the candy corn as desired! You can even make Mellowcreme Pumpkins!

This yielded 110 candy corn, all larger than the store bought ones you're used to! You could easily half this recipe & have a ton to share with others. I made mine somewhat large, as they're easier to work with, but you could make smaller ones & have a TON!
