Easter side dishes?

I am looking for some tasty easter side dishes, does anyone have suggestions? they will be *served* with ham (but ham will not be consumed by us hehe don't ask). The "easter" section here is empty..

Hmmm ... At Easter dinner with my family (we always had a ham), I remember eating sweet/spicy things, like baked acorn squash with brown sugar, or mashed yams with maple syrup. Grilled pineapple slices are also excellent. I'm also thinking of some nice roasted apple sauce (recipe in VwaV, or just roast the apples first). You could always make the traditional mashed potatoes with gravy (mmm...mushroom gravy), steamed carrots, dinner rolls, or a nice salad. Most of these things are vegan anyway, but people  (like my family) like to put butter, cream, or cheese on top. This way you'll be guaranteed something good to eat and everyone will like it.

We always had scalloped potatoes on Easter Sunday & How It All Vegan has a wonderful recipe for Dijon Scalloped Potatoes. If I remember correctly, I double the sauce part of the recipe, add an extra spud or two & make it in a 9" x 13" pan. They are delish! I've also thought that sauce would be good over macaroni for a mac-n-cheese bake.

I made a Seitan "Meatloaf" for those who wouldn't eat ham (Including ME!), with a whole wheat pasta using Dragonfly's Bulk Un-Cheese Dry Mix as a sauce.  I also made hummus with pitas and crudites, and carrot and cabbage coleslaw using Vegganaise for the base.  Good luck...and mashed sweet potatoes with a hint of maple syrup are always a crowd pleaser, Vegan or not!!!!
