Dinner tonight

Here for dinner we are having Imam Bayildi... We cut two eggplants in half, scooped out the flesh, diced it along w/tomatoes & squash & onions. Cooked the veggies with garlic & spices to taste. Meanwhile, the 4 eggplant shells were lightly oiled and some dried herbs tossed on, and then placed on a greased baking sheet. Scooped the cooked veggies in. On top we sprinkled bread crumbs, and on 3 of the 4 shells we sprinkled cheese. (My husband and I are ovo-lacto veg. We are eating with a vegan friend.) It is baking at 350 now, for maybe 30-40 min or till the eggplant gets tender.... CAN'T WAIT.

I'm trying a new recipe from this site. Brown & Wild Rice Soup. Already got the cornbread baked & have warned hubby NOT to touch it, or else ;)
baypuppy, our cat will holler at us if anyone has soyurt. He doesn't come to the fridge often but he seems to know when I grab yogurt. He can be quite demanding ;D

Last night I had black pepper and sage polenta, fried till crispy and golden, served with beans of the gods aka Tuscan white beans with garlic and sage, baby greens tossed in lemon-olive oil vinagrette, and whole grain grilled bruschetta topped with some diced fresh tomato and chopped fresh basil tossed in a little olive oil. It was great with the Sangiovese we had left over from the night before! :P I'm a total foodie...I can't help it. ::) Having the leftovers for breakfast sans wine.
that meal sounds INCREDIBLE. can i come over for dinner tomorrow?
too bad you killed the last of that sangiovese, though. that was rally the kicker for me!
Yeah.. the wine is gone, but I had a Syrah/Viogner blend (Yalumba vinyards, Australia) last night with more of the leftovers that was a quite "spunky"...you should give it a try...they made limited quanities, but its very reasonable..only about 11.00 per bottle.
you guys eat really well. tonite (and every friday) my daughter and i have e.w.u.f. that is 'eat what you find' night. if its in the fridge, you can eat it. we have these nights every single friday for the past 12 years. i will probably eat puffins and a half of a muffin. since she is going out with her friends tonite, she will porbably eat some ethnic food. (shes not vegan, i am) i usually cook from scratch 5 nites a week, but hey, fridays? you are on your own!

i'll check that out. i'm a huge fan of red wine. i'm actually going wine tasting on sunday for my friend's birthday and to a winery restaurant for dinner. i'm really excited!
I steamed some tempeh, then marinated it with an Indian sauce, then stir fried it with onions and red peppers and garlic. Yummy.
