Defrosting seitan question

Hello everyone.

I'm in the process of defrosting a container of seitan that I put in the freezer a few weeks ago. Since it was my first time making seitan I froze the leftovers in the broth and now since there was quite a bit of broth the container has been sitting in my fridge for three days and I'm waiting for the last top portion of ice to melt. Will the seitan that's already in the melted broth be alright? I've been considering just taking out the last frozen portion and throwing it away since there isn't much seitan stuck inside of it. Also am I supposed to reboil/simmer the pieces or just use them in my cooking straight out? I'm also assuming that I can get rid of the broth and put the pieces in a different, clean container. Is that fine too?

Sorry for all of the questions, but I just have no clue what to do and I don't want to ruin it or have it go bad on me. Thank you for any help or advice you can give! It is greatly appreciated.

Seitan freezes well in the broth but also out of the broth if you wrap it well. I never freeze it in the broth anymore since it takes up too much freezer space. When I refrigerate it I always do so in the broth. Usually once I take it out of the freezer it is because we plan to eat it and there isn't any left over to refrigerate.

For the little bit in your fridge--just wait for it to finish defrosting (you can put it in the microwave0 and then eat it It will keep in your fridge for another couple of days. I am assuming you already cooked it before freezing it so you do not have to recook it--you can just add it to whatever recipe. If there isn't enough to do much with, you can always chop it up and eat it on a salad. I would never, ever throw away homemade seitan since I still find it a bit of a pain to make, so every morsel is like gold.
