Blueberry Cheesecake Ice Cream, Anyone??

I tweaked a recipe from Vice Cream (excellent book, btw) and came up with a pretty good blueberry cheesecake ice cream. I thought I'd share.
1 1/2 cups raw cashews
1 1/2 cups Silk vanilla creamer (or vanilla soy milk)
1 cup maple syrup
1/2 bag of frozen blueberries
1 tsp. lemon juice
1/3 - 1/2 tub of Toffuti "cream cheese"
In a blender, process cashews and creamer for several minutes, until it it thick and creamy.
Add all other ingredients and process until smooth and creamy.
(I reserved a few blueberries to put in at the end and just pulsed them so that I would have some blueberry pieces in there.)
Freeze according to your ice cream maker's directions and enjoy!

Thanks for posting the recipe. It looks great. I've been wondering about ice cream makers and how good they are. Do you use yours often? Do you have enough recipes for variety? What brand would you recommend?

hey i have a donvier incream maker
mine is a hand crank method because i figured "electric" wanst REALLY ME making icecream--like a bread machine as opposed to making bread by hand...anyway, that's my way of thinking
mine has a cylander that is to be kkept in the freezer until use...i don't use it often but its cool
if you don't have an icecream maker...just put the mix in a bowl and in the freezer and stir it every couple hours to circulate the frozen stuff from the outside in...
I have a Cuisinart ice cream freezer. I love it and use it all the time! I keep the freezer cup in the freezer all the time so that I can make "ice cream" whenever the mood strikes. I have tons of recipes, and the book Vice Cream is full of nothing but ice cream recipes!

I don't have an ice cream maker, but I'm SO going to get this book. Perhaps my super vitamix 5000 can do ice cream, too. We'll see. Or, I'll just petition the family to buy us one, if I promise them ice "creams." Yum.
