Beans & Greens, you asked for a power cookie...
Here's a recipe I came up with. The cookies are more cake like than chewy, but very good! We like that they are lower fat & sugar. I store the baked cookies in a plastic container in the fridge & zap them in the micro for about 20 seconds before serving.
Choco Chip Protein Cookies
1 cup flour
1/2 cup protein powder
1/2 cup wheat germ
1 teaspoon salt
1 teaspoon soda
1/2 cup margarine (1 stick), room temp
1/2 cup sugar
1/4 cup molasses
1/2 cup unsweetened applesauce
2 teaspoons vanilla
2 egg replacement = 3 teaspoons of Ener-G + 1/3 cup of room temp water
choco chips - I don't add very many - one bag makes two batches of cookies for me
chopped nuts if you like
Preheat oven to 375
Mix the dry ingredients in a medium bowl. In a large bowl, beat the margarine until creamy. Add the sugar & beat again. Add the molasses, applesauce & vanilla & mix well. Pour the 1/3 cup water into a small cup & add the Ener-G. Whisk until frothy. Mix the Ener-G into the wet ingredients. Add about half the dry ingredients into the wet & mix well. Add the remaining & mix well. Add the choco chips & nuts if you desire, & spoon onto a cookie sheet. Bake at 375 for approx 13 minutes.

I think Ashley Kimball posted a soy-protein isolate chocolate cookie-- a mint one, if I remember correctly. So if you're looking for a protein boost, you might want to look into those as well?
