Veganomicon Recipes

OK, I bought my copy of Veganomicon (cookbook from the same authors as Vegan with a Vengeance and Vegan Cupcakes Take Over the World) last week at Barnes & Noble.  Over the weekend, I made my first recipes from the book.  I made the Chickpea Cutlets with the Mustard Gravy.  I also made the Tomato-Rice Soup with Roasted Garlic and Navy Beans.  For sweets, I made the Chocolate-Chocolate Chip-Walnut Cookies.  Everything was really good.  I've been having a difficult time staying away from the cookies, they're so good (very thin, crispy, chewy!).  Has anyone else here purchased this cookbook yet and made any recipes?   I'd love to hear what people are making and enjoying from this cookbook.  I really enjoy Isa Chandra Moskowitz and Terry Hope Romero's other cookbooks, and I'm looking forward to exploring more in this new book.

That is excellent advice!  I'm going to try that. They were good the first day, but I tried microwaving my leftover cutlets too and the creepy texture made them inedible for me.

  They also did not reheat very well (in my microwave). They got kind of stringy. Maybe I didn't knead enough?

The same thing happened to me! Chewy & stringy in the microwave... :-\ However, after re-warming one in the microwave & having that experience, I rewarmed another in the toaster. Haha--not the toaster oven, just my regular toaster. And I actually liked that! It made it crisp on the outside, but not chewy. :)

Oh, good! I hope it works for you, too! I just put it on a low setting so it didn't burn... I'm sure the oven would work, too, but who wants to preheat that for just one little cutlet? ;)

I made the Mexican Millet, which was very good and the chocolate chocolate chip walnut cookies for my student.  It was hard not to eat them all, they were so good.  ;D (I only swiped one).  I think I'm going to try those black bean burgers next!

I am officially addicted to the Chocolate-Hazelnut Biscotti... Except I put in sliced almonds instead of hazelnuts, because I always have almonds on hand, and I also throw in about 1/2 cup dark chocolate chips! Yum yum yum! :D

I made the Orange-Cranberry-Nut Bread last night, and it smelt divine! I didn't get to try any because I am sending the loaf off to my boyfriend for his finals week, but I stole a tiny nibble from the bottom & yum! I think I might have to make another loaf tonight to keep at home... :)

Just had the Sauteed Seitan with Mushrooms and Spinach.  Really good and filling.  Bland in a good way.  I halved the recipe and it was plenty for me and my fiance to be quite stuffed.  I served it over rice with mashed yams on the side...good comfort food on a cold snowy evening.  Yum!

Update: I made this bread again last night for my family & me, and it is so good! I added nutmeg & cinnamon, in addition to the allspice, and some molasses (I have a hard time sticking to recipes exactly as written ::)), and it is just delicious! Perfect for this time of year. :D

I made the Pumpkin-Cranberry Scones, Lemon Bars, and Samosa Stuffed Baked Potatoes.  The scones were more cakelike than I tend to enjoy, but the authors warned of that in the recipe.  My very non-vegan family adored the Lemon Bars, and I'm going to make the potatoes more often!  VCTOTW and VWAV are two of my favorite cookbooks so I was really eager to get the Veganomicon.  It did not disappoint. ;)

Adding on to my list..
The Snobby Joe's and the Spaghetti w/ Bean Balls and Marinara Sauce are really, really good.  My only complaint is that I didn't think that one recipe of Marinara Sauce was enough to coat the bean balls and the spaghetti.  Next time, I think I'm going to add a can of tomato sauce too, since I prefer a less chunky sauce also.

I also made the Green Pea and Lemon Risotto w/ Roasted Red Peppers, though I wasn't blown away.  Again, I think my reaction is mainly due to personal preference, but next time I will definitely add some more roasted red peppers, and maybe something else, if I can think of what else it seems to be missing...

After reading all these posts about the desserts I'm anxious to try them!

I made the chickpea cutlets again last night and they were SO GOOD. I did not add the lemon zest this time around and it was perfect. I also topped it off with the mustard sauce.I also made the easy stir fried leafy greens and they were good as well.

I baked mine (cause I don't like to fry things) and they were fantastic.  I don't remember how long I baked them for, but it was longer than the recipe said, cause i wanted them to be nice and firm, a little golden.

Has anyone made the chic pea soup with the soba noodles? i saw a picture of it online somewhere and thought it looked really good. I don't have the book yet, but I do have this one recipe I'd like to make. Just wonder if its worth the trouble.

Oh, thanks! Last time I saw that picture I thought it said "buy the book you cheapskate!" I was feeling guilty for having a friend email me the recipe. I might make it tomorrow if I have the energy (1st tri-mester blues!) :P  When I do make it I will post the results!

I made the chickpea noodle soup and really liked it. Though I used regular pasta, and used about 6 ounces, and it was too much.

sb - did you bake or fry the chickpea cutlets?

I fried them. I heard reviews stating that baking them made it really dry. I'm also not afraid of frying stuff from time to time, as I think I eat pretty healthy

I made the Skillet Corn Bread tonight.  It was ok.  Not fabulous enough to rave over.  Just ok.

Meh.  I prefer to make the VWAV Sunny Lemon Blueberry corn muffins but savory with my chili.

I have all the ingredients for this at the moment and I plan on making it tomorrow night for dinner, I'll let you know what I think :)

i made the chickpea soup last night, i omitted the carrots cus i didnt have any but i added some fake chicken and used spaghetti noodles broken up.  its really good, but i did add an extra cup of water while it was cooking and it could use even more now.  but! i also tried a forkfull of it cold (since it was more of a noodles in a thin sauce today when i took it out of the fridge) and yum!  not bad at all!

mmmm the chickpea soup is goooood. i left out the mushrooms because I don't like them. but i added extra carrots and celery. I also used only about one T barley miso cause i couldn't find brown rice miso in small containers and I didn't feel the urge to spend like 15 dollars on a HUGE tub of it.

but it was deeelish. definately could use some more water, but i'm looking for ward to maybe endind up with noodles in sauce tomorrow :)
