The Unofficial "Other Cookbooks Not Listed" Thread

I thought I would start a thread for recipe reviews of cookbooks that don't have a thread, and probably don't need a thread.

So if you are using older cookbooks, or cookbooks without a thread, I'd love to hear from you here.

Again from Vegan Soups and Hearty Stews for All Seasons, I made Cool ratatouille a classic mix of zuchhini, eggplant, and tomato.  This was very good.  I can't say I've ever made a ratatouille before and I liked it.

Vegan Soups and Hearty Stews for All Seasons

Spring vegetable soup - A deslih. hearty soup that calls for potatoes, carrots, celery, onions, leeks, mushrooms and peas.  I don't like peas so I used chickpeas instead.

Vegetarian Times:

French Toast Doughnuts - Just made the doughnut part of this recipe as a base. I added cinnamon, ginger, allspice, and cardamom to the batter to give them a chai flavour, and coated them in powdered sugar rather than do the french toast glaze thing. They are so good! They so remind me of those Hostess mini powdered sugar doughnuts, but better.

Devil's Good Doughnuts - Delicious! The doughnut is so tender. A perfect accompaniment to a cuppa coffee.

From Love Soup:

French Lentil Stew with Roasted Carrots and Mint

I really liked this! It was soupy for me, not a stew. You have roasted carrots and roasted onions that are silky sweet with French lentils. The twist comes from lemon juice, harissa (I made a recipe from Epicurious) and dried mint. Added 2 tbsp harissa. Loved. :) Makes a ton. :)

Harissa: http://www.epicurious.com/recipes/food/views/Harissa-Sauce-107098
-doubled Aleppo chili flakes, subbed cumin for caraway, toasted spices and then ground in spice grinder, added dash of cinnamon, omitted sugar. Quartered the recipe for 1 roasted red pepper.

From Whole Foods to Thrive:

Millet Bowl with Greens and Toasted Sunflower Seeds
I really liked this too! My first time using millet and it tasted great! Quinoa or brown rice would be nice, too.  Everything comes together as the millet cooks with some pan-seared veggies overtop. Yum!
Modifications: used all spinach (300g), subbed pumpkins seeds for the sunflower seeds, subbed lime juice for lemon. Stirred miso into the millet after it had cooked not while it was boiling.

db is the vegan baking freakin' GODDESS of VW......... :)>>>

From Caribean Vegan I made "tofish" - I was looking for a quick tofu marinade recipe and found this.  It's water, olive oil, Bajan seasoning, nori, green onions, and Scotch bonnet pepper.  It's part of a recipe that includes a sauce, but I just made the "tofish"...and baked it.  It was quite good, and not fish-like at all, which I figured it wouldn't be and I hate fish anyway.

Caribbean Vegan - Curried potato salad - Quite good, just your run of the mill oil, vinegar (she uses both apple cide and white) and curry mix, with Scotch bonnet pepper of course.  She gave the option of mayo which I took but not in the amount she suggested, I cut back on the oil as well.  The veggies are onions, red and green bell peppers.  She calls for a whopping 2 tsp of salt plus salt in the water you cook the potatoes in and which I used about 1/2 tsp max.

Yellow spit pea dal - I use coconut oil every chance I get so of course I used it in this. This has such a home-like taste to it, I loved it. I have a crazy stove so using this method of speeding up the cooking time for lentils actually took less time than even the book. Anyway, this isn't a dish that's bursting with flavor but it has the perfect amount of seasoning courtesy of the curry powder, garam masala, and a bit of habanero.

may i ask why? you need to use it up? or is there something magical about it?

I have a huge tub of it that I need to use up but I do love the taste of it. I use it everyday as a facial moisturizer too.. works great.

Doughnuts by Lara Ferroni

There are some vegan/gluten free recipes in here but it's so easy to veganize the recipes that you can use the ones that aren't vegan too.

Basic cake - Used 1 flax egg. They came out so light and fluffy it was hard to believe that they were cake donuts! Great flavor thanks to the 1 tsp of nutmeg.

Chocolate cake - Used 1 flax egg. Same result as the basic cake. Fantastic chocolate taste and the color is much darker.

Chocolate icing - Took 4 tbsp of almond milk to thin it out for the topping. Worked great and tasted good.

Maple - Loooooved this on top of the basic cake donuts. Need to try this on the basic yeasted donuts next.

From Everything Vegan

Curried White Bean and Kale Soup meh......this soup has sweet potato, kale, and great northern beans.  For spice is has curry powder and smoked paprika.  The sweet potato throws it off for me.  It calls for red wine vinegar at the very end which also throws it into a meh experience for me.  Still it's hearty and very healthy.

Joanne Stepaniak was probably one of the first vegan superstar cookbook writers in the 90's at a time when most cookbooks were ovo-lacto and un-vegetarian Mollie Katzen and Moosewood were the big stars.  She wrote the Uncheese Cookbook and Vegan Vittles, and in 2001 came out with Vegan Deli which I got.  It's full of simple, quick lunch/dinner ideas.

I made this simple Spiced Hummus - which is a thick pastey basic hummus with tahini, garlic, lemon juice, olive oil, cumin, corriander, paprika and cayenne.  She called for parsley which would have been good, but I didn't have.  I love hummus and loved this.

I made a couple of more things from Vegan Deli that I mention above.

Cold sesame noodles and vegetables - Very good.  This is your basic sesame oil, rice vinegar, ginger, garlic, and soy sauce noodle dish.  Seems to be a recurrent dish I make, no matter which cookbook I buy, if there's a Asian cold noodle dish I'll make it.  The recipe calls for sphagetti noodles, and I used brown rice linguine/pad thai style noodles.  It asks that you cook the veggies for three minutes at the end of the noodles, but I blanced for about one minute to maintain crunchyness.  She calls for two tbls of sugar and I used just a large pinch and used siracha for heat instead of cayenne.

black bean hummus - Very thick hummus that blends black beans, tahini, soy sauce, balsamic vinegar, garlic cumin, ginger, and cayenne in a thick hummus.  Genious.  Loved this.

The Best Veggie Burgers on the Planet

Nacho cheezy sauce - I found this disgusting, it was way too sweet and I think it's because creamer is used. I'm thinking about trying it with an unsweetened milk but I was so turned off by the taste that I'm not sure if I want to try again.

Jalapeno cornbread burger - These are really dry so you definitely need a cheezy sauce to go on top. The taste is fine but I wasn't really impressed. This book relies heavily on TVP so if that isn't your thing you won't be into this book.

Mixed bean stew - One of the best dishes I've had in awhile. There's all kinds of awesome flavors going on in this! There's spices, fresh seasonings, vegetables, and a random assortment of beans (I used black-eyed peas and kidney). I omitted the hungarian wax peppers since I didn't bother buying any and I ended up with the perfect amount of heat using a chopped and seeded habanero. Don't be lazy and make the coconut rice to go with this!

Coconut rice - This was amaaaaaazing but the amount of coconut milk is completely wrong for the amount of rice. I ended up having to add some water and I don't know how much cause I didn't keep track. This isn't one of those coconut rices where it's just coconut milk + rice + salt and that's it. It actually has some spices going on and some celery, green onion, onion, etc. so it's really flavorful.

Overall, this was a fantastic meal.
