P.S. I just bought this with some of my birthday money! :) I think I really like it... So far, I have made cornbread (awesome!), chocolate chip cookies (very, very good--and easy, and they actually spread! :D), and cinnamon rolls (these weren't too great for me... Although my family had rave reviews & I tend to be more critical of my own cooking ::), but I didn't think they were all that great, and it seemed like a lot of work for the so-so end result).

As I say in the other thread, I like that the author breaks down why certain ingredients/methods/etc. make for a great baked good. And the recipes seem really classic, and look delicious! Also, this book was just voted Best Cookbook of the Year by VegNews magazine! :)

So, this was another cookbook I was interested in.  But... my bookstore doesn't carry vegan cookbooks, and I prefer to browse before ordering, so... I'm going to bug you all for reviews!

First of all... cornbread... it's important.  Is this a sweet recipe?

Do you WANT a sweet recipe or do you NOT want a sweet recipe? If you DO want it sweet, Vegan Lunch Box has our go-to cornbread recipe. It's divine. Since that's the only one we now use, I can't suggest a recipe for cornbread that is not sweet.

I agree that the Vegan Lunchbox has the best cornbread.

I looked up this book on Amazon and if you look at the picture views, there is a picture of the cheesecake recipe. So printed it and made it -- it was amazing. Totally junk, and total processed food, but a great substitute for real cheesecake. So I think I'm going to buy the book. Look at http://eatair.blogspot.com -- they have some posts for things they have made and all look good.

LOL, I'm not interested in that cookbook, then.  I like a heavy, not sweet cornbread.  I know, I'm in the minority.

Actually, I remember the cornbread not being very sweet. It was really moist, delicious, crumbly & thick, but I remember making a mental note to add slightly more sugar next time; I am in the sweet-ish cornbread crowd. I could send you the recipe if you'd like to try it for the true test of the book? ;)

I had the same problem before we moved here. Amazon will let you look at the Table of Contents and it let me look at 10 or so recipes when I did the "search inside this book" thing. It will at least give you an idea of what style the book is written in.

Thanks for the Amazon tip.  Everytime I've wanted to "search inside" (does this bring up Diva Club memories for anyone else?), it wasn't offered for the book I was interested in.  Of course.

I used to bake "Spitz" dry press cookies, 3 c flour, 1 c sugar, 1 teas. vanilla, 1/2 teas almond flav,
my question is what to substitute for the egg(s) (I forget how many, maybe just one egg,it was a very dry recipe.) I sometimes do applesauce or Tofu, but this is a dry recipe, not like the moist other cakes and such.

PS. Does anyone know anything about perhaps Guar Gum or Locust bean gum? just a Tablespoon? Does it taste awful? some kind of thickener? Or would it cling, substitute for eggs? ???
