Fool Your Friends Tacos
I made these for my boyfriend and myself, we polished the lot between us!
It's a basic recipe but very tasty
Filet O Tofish Sandwiches
I was disappointed by these. I was hoping for something a little more flavoursome.
I also had some trouble getting the breadcrumbs to stick onto it. Because the marinade is just kelpy water I made them again upping the amount of kelp powder
and added some lemon juice and soy sauce, and had to increase the amount of tartar sauce to make up for it. but they were still not all that :(
I shall persist though! perhaps having some nori wrapping the tofu would get a greater fishy flavour?
Sun Dried Tomato and Roasted Red Pepper Panini
This recipe i liked :) so much so that i had it 4 nights in a row :o I think when i made them i grilled mine rather
than roasted and added some grilled courgette along with it .yummm
Tuno Tempeh Sandwich
I LOVED THIS. It didn't taste like tuna but it definitely tasted like something i had trouble stopping myself from eating. I make this all the time ;D
With my love for the fishy taste i upped the amount of kelp powder, like i do with most "fish" recipes.
Simple and quick to make.I enjoyed this! I made a rice bowl with this with stir fried veggies and seitan. And then again with tempeh at some point.
Veggie Meat Loaf
I have never had meatloaf before in my life so I've not much to compare to. But WOW. This was great! I had it as the protein part of a sunday roast dinner.I can tell you it had me looking forward to having it again the following sunday.I also think it tasted great as a leftover the next day!
Collard Greens: Basic and good. Very very southern tasting.
Down Home Chili: I had this a while ago and I remember it being rather watery. Not my favourite.
Chick'n Seitan: Very good! I make this seitan more often than any other recipe. It really does taste like chicken.
Spicy oven fried chickn seitan I like this as a good basic recipe :) it'll definitely be a regular. had some trouble getting breadcrumbs to stick but tbh its probably just me
Fried chickn seitan I tried this today! Its really good.. I just tried it with one little chunk of seitan cause im petrified of deep fat frying methods... (fat-o-phobia ::) )
and my lack of self control... What i tried of it was sooooooo delish though.
Bursting Blueberry Muffins - LOVE these! I followed the recipe exactly, I even bought Fresh blueberries (it used 2 cups of fresh blueberries so they truly were "bursting"! Great flavor, texture, will definitely be making these again and often!
Over the weekend I made the Easy Down Home Chili, it was VERY easy and quick and had a great flavor! I did the salt, pepper and cayenne to taste, so it definitely had a little "kick" to it, loved it! I also made the cornbread recipe and I really liked it, it was light and fluffy and just a little sweet (I think my measuring spoon may have been rounded instead of flattened, lol!) Great combination! So far, I am really liking this cookbook!
French Onion Soup
Very good! Only made a few small changes. Used two not-beef bouillon cubes in 5 1/2 cups of water instead of vegetable stock. I also don't have oven-proof bowls, so I just melted Daiya on the bread slices in the oven and served it alongside the soup for dipping. The caramelized onions were sweet enough on their own, so I don't think it needs the teaspoon of sugar. I will probably leave it out next time. Also added extra black pepper, and that seemed to help tone down the sweetness. (kristinv)
Black Bean Soup
I didn't like this one served as directed. The lime juice (and the vegan sour cream, if using) make the soup kinda sour, and it was really brothy. Not at all like the thick, hearty black bean soup that I'm used to. I ended up adding chipotle hot sauce and crumbled tortilla chips to soak up some of the broth, and it was pretty good that way! Wouldn't make again. (kristinv)
