The main component to this recipe is the vegan whipped cream (creme de la creme) with your choice of fruit. This is my first time making vegan whipped cream, and I was surprised how nice it was. Very strong vanilla flavour (thank you Penzey's double strength). I used macadamia nuts and only 1 tbsp agave. Blended with water to my desired consistency. It is quite a filling cream topping, so a full recipe will last me way more than 4 servings. I used it to top bananas, strawberries and blackberries. Yum! (blinknoodle)

Yum! I was interested in trying out a new combination of grains for breakfast. I have never cooked kasha before, but I really liked this combination. Good texture. I added in sweetened soy milk and a chopped banana. Didn't feel like it needed more sweetener. Yum! (blinknoodle)

Quick, easy and tasty way to make bacon. I wasn't in a hurry and marinated for 24 hours. I used the optional smoked paprika because I love that stuff. I crumbed it prior to marinating because I was actually making bacon bits. (tweety)

I don't know what Hot and Sour Soup is supposed to taste like, but I didn't really like it. I was intrigued by the use of fresh apricots but i couldn't really taste them. I also added some mung bean sprouts. I wouldn't make this again. (blinknoodle)

Very good! I was pretty brain-dead today so even though it is supposed to be a a simple 30-minute soup, it took me 45-50 minutes to make. I blame it on my desire to peel my tiny beets (although I know it isn't necessary and I had to squeeze 4 oranges by hand (did the shredded in my food processor). There is no way 1-2 oranges gives you 1.5 cups of juice... unless I have been missing out all these years! (maybe with a juicer you get more?) Anyways, the soup was delicious. Nice, light, flavourful with hints of dill.. I used red miso and it was very subtle. Yum! (blinknoodle)

I think if I'd have used cashews I might have followed instructions and purred, but put my immersion blender in a bit and left it chunky. I omitted the salt as 1/4 cup of soy sauce is salty enough, and I used veggie broth. I sprinkled some crushed red pepper hot top for heat. (tweety)

Quick, easy and tasty way to eat collard greens. I like that it only cooks the greens a few minutes rather than simmered for a long time. My greens came out of a bag from the grocery store and weren't fresh top quality and came out bitter. I imagine in the winter when greens are in season and fresh this would be better. (tweety)

I really liked this! It is a simple mixture of red lentil and quinoa, quick to cook up and completely modifiable. I added in cabbage and carrots, used 1/2 tbsp soy sauce, dill for my herb, and added in the miso and ginger as recommended. Yum! (blinknoodle)

Very good. This used a lot of tomatoes, artichokes and chickpeas...foods I love. I wanted mine thicker than the recipe called for so instead of adding the safron broth at the end I added it the last five minutes to simmer and thicken the dish. Loved it! (tweety)

Very good. This type of meal is a staple in my house, I love Asian tofu stir fries. This one called for an option of mirin and five-spice which I took. I eliminated the sugar and opted for heat instead and used a tablespoon of sambal olek. I had corn starch and not arrowroot and that seemed to work just fine. Otherwise pretty cut and dry stuff, but good. (tweety)

I enjoyed this a lot. I loved the marinade which was made from tomato paste, lime, soy sauce, water, olive oil and garlic. The rub was chipotle chili powder, cumin and a tad of cinnamon. I actually liked the sauce so much I kept most of it and rather than rub just mixed the rub into the sauce with the onions and kept it saucy. (tweety)

I really liked this! I used vanilla as my flavour extract, added more cocoa and omitted the almond butter, but I am sure the almond butter (or hazelnut butter) would have been even better! I like how there was lemon juice because it added a nice light note to the pudding. You can drizzle in wter to make it more of a mousse than a pudding. I preferred it without any water. (blinknoodle)

Pleasing greens soup
