Good Vegetarian Cookbook

Hi everyone!

I'm on the market for a good, trusty vegetarian (not vegan) cookbook. I'm thinking a big, fat, have-it-forever, bible of vegetarian cooking. Anyone got a suggestion for me?

I really like Mollie Katzen's "The New Moosewood Cookbook." She also has a few others that are nice, but this one's my favorite! All of the recipes are hand-written, as well, along with little sketches drawn by Katzen. It's very cute & artsy-craftsy. A lot of healthy food, but also great comfort food. It's really versatile! :)

One of the things I buy a cookbook for are the pictures.  Are there any great veg*n cookbooks that have good pictures of the food?  In looking through the bookstore, I didn't notice any....
My ideal cookbook would be one with tons of recipes, all or most of which are accompanied by a great picture.  Photos of the recipe in progress would be good, too.

A friend of mine has Vegetarian Planet-it IS awesome. I had forgotten about it. Any comments on it? Other suggestions?

I'll second Jessacita's suggestion.  The New Moosewood Cookbook is really great - it has the vegetarian "basics" like pesto, hummus, cream of XYZ soup, falafels, curries, stirfry, samosas, spanakopita, vegetarian chili, miso soup, as well as yummy desserts.  Not too many pictures, but the ones that are there look great.  It's not a huge book, but it covers a lot of ground as far as different courses and ethnicities.

I've also heard good things about Deborah Madison's Vegetarian Cooking for Everyone, but I have not used this one myself.

I really like Deborah Madison's "Vegetarian Cooking for Everyone."  It is one of those voluminous, encyclopedia-like cookbooks you were talking about.  It is organized around vegetable types and food types, so if you come home from a market with a weird vegetable you don't know what to do with, it is easy to find some ideas.

If you want something with an international flair, I recommend Madhur Jaffray's World Vegetarian.  That is another hefty gem, and I have had a better success rate with that cookbook than with any other cookbook I own.

I love that one.  Also, I recommend Crescent Dragonwagon's Passionate Vegetarian.  There is a recipe for *everything* in there, including suggestions on veganizing many of the lacto-ovo recipes.  There are no pictures, but her descriptions are just as vivid.

The Real Food Daily Cookbook has nice pictures and vegetarian/vegan recipes.

The Complete Vegan Cookbook doesn't have lots of pictures but it does contain a lot of helpful tips - and it's very easy to make the recipes vegetarian and not necessarily vegan.

The PDQ (Pretty Darn Quick) Vegetarian Cookbook has no pictures, but it's full of a ton of really easy recipes and it offers tips for making Vegan substitutions.

Vegetarian Dinner in Minutes by Linda Gassenheimer is one of my long-standing favorites.  It's not thick enough to compare to a bible, but I've cooked almost every recipe in there and loved each one.  They're quick and easy as the title suggests, and the book is divided into categories:  American Comfort foods, Tex-Mex and Southwestern, Cajun & Caribbean, etc.  It really helped me learn about balanced, super-tasty vegetarian meals.  Plus, there are tons of pretty pictures!
