Another VWAV Recipe Review - Cold Udon Noodles w/ Peanut Sauce
As you can probably tell, I just got this cookbook last week and want to try EVERYTHING out of it.
I made Cold Udon Noodles with Peanut Sauce and Seitan tonight, although I omitted the seitan since I was out. I followed the recipe exactly, but used apple cider vinegar instead of the rice vinegar and added chopped cilantro as a garnish. Holy deliciousness! This was awesome! 5 stars! This makes a LOT, there are only two of us and there are at least five generous servings left. We ate it a bit warm, but the noodles definitely taste best cold, it reminds me of thai noodle salad.
This is definitely my favourite recipe so far, highly recommended.

And I just made the coconut heaven cupcakes. They were amazing. The perfect texture for a cupcake.
