Ani's Raw Food Essentials

This cookbook by Ani Phyo is amazing.  It's hardback and pricey at $27.00, but Amazon had it discounted and I got it for my birthday.  This is the raw food book I've been looking for.  She takes the time to explain things and writes snippets throughout the book and has great pictures.  She tells you how to dehydrate using your oven, but recommends a dehydrator which I might get if I'm so inclined later on.

I'm not about to go raw, I love tofu and other cooked foods to much, and frankly on that kind of diet, I'm constantly starved, but understand the benefits and that it works for other people. 

Tonight I'm going to try one of the soups and will post the review later. 

Tomato chili with taco nut meat - A-freakin'-mazing.  I knew raw was good, but this was off the chain.  I had to stop myself from eating the whole thing because there's a cup of walnuts there (good healthy omega's but high calorie).  I followed the recipe precisely using shitake mushrooms for the mushroom, and added a jalpeno for spice. 

Glad it tastes better than it looks, because it looks gross.

Hi Tweety, I have her first book Raw Food Kitchen, and love the Spanish Scramble. It was the very first raw food recipes I tried and I was very impressed. I am also not 100% raw, but I have been trying to be about 50% raw each day. I don't have the time to dehydrate, sprout, and spend a lot of time cooking, so this will just have to do. I will have to try the recipes you posted. When I do have time, usually on weekends, I do love to cook up ethnic foods and have made some of my own recipes.

Chinese Chickenless Salad - Very good!  I was so tempted to sautee it, but that would be redundant.  I love how not cooking it brought out all the flavors especially the raw ginger.

Yin and Yang salad with jalapeno-tahini dressing

Fantastic!  I forgot to buy jalapeno, so I used Thai red chili pepper which I had on hand.  I whisked by hand because my blender of awaiting a part, but didn't need to mix in my opinion.  I diced the carrots because I was too lazy to julienne.  I used nappa and mixed baby greens for the salad. 

I loved how the flavors just kind of hit me in waves...first the tahini, then the lemon and finally the hot peppers.  Loved this.  I'm going to make this dressing again and keep it on hand for salads.

red cabbage and grapefruit - Not bad.  It calls for red cabbage, dried cranberries, grapefuit, pumpkin seeds and lemon juice.  I think orange juice rather than lemon might better counteract the bitter of the grapefruit.  I used toasted pumpkin seeds as it was all I had, which took away the "rawness" of the dish.  I also used storebought cranberries which has added sugar which I think helped with the tartness.  Overall not a bad dish.  I had leftover cabbage I needed to eat.

I just bought this book and I am anxiously awaiting its arrival in the mail. I bought it solely based on the fact that I loved her first two books so much. How is Raw Food Essentials for dehydrated recipes? I ask because I don't have a dehydrator and didn't even think about it when I ordered the book.

I don't have a dehydrator either.  There are quite a bit of recipes that use a dehydrator or a oven that usese a low heat setting.  However there are plenty of smoothie, salads, soups and other things that don't need it, so it was worth me getting.  I still haven't decided about getting a dehydrator.

Korean stir fired kelp noodles with vegetables - interesting dish title since it certainly is not fried.  Very good.  This was my first time trying kelp noodles....which are a little pricy, but good and crunchy and a nice noodle alternative.  It calls for mushrooms which I eliminated since I don't like raw mushrooms and I added some siracha sauce for heat.  It calls for spinach, but I used mizuma...a mustard-type green that was part of my CSA share this week that I needed to eat. Simple, quick and easy.

I have Ani's Raw Food Kitchen and I just ordered this one from Amazon today.  I've been tempted for a while because of Tweety's pics, but what pushed me over the edge was that Amazon has it marked as a "special offer" for $11.18 today.  If anyone has been contemplating buying this book, but didn't want to pay $27.00, today would be your chance to order it cheap!

Chipotle kale chips - Hated it.  She even offered oven baked directions.  The 15 minutes she suggested wasn't long enough, it took more like 30.  She combines olive oil, chipotle chili powder and agave.  Blech......olive oil and chipotle wound up being a bad combination, and the sweetness of the agave wasn't good.  I would use a milder oil like grapeseed, chipotle powder and leave out the agave altogether.
